Last night I met my friend at Miguels Cocina for dinner and drinks. We sat outside on their patio and enjoyed the beautiful summer evening. It was happy hour all night long which included $1 off wine. I will have a glass (or two) please!

We couldn't decide what to order so we decided to split the sampler platter: calamari strips, beef taquitos, quesadilla, ceviche and nachos served with guacamole and jalapeno cream sauce:

After sharing the platter and a ton of chips and salsa, we called it a night. After I left Miguels, I went over to Lisa's house to watch The Bachelor Pad. I missed the last two weeks so I had to catch up on the gossip! Such a silly show. :) Does anyone watch it?

After going to bed too late and having to get up too early...I was ready for a good breakfast! I made an egg white puff in the microwave and put it on wheat toast smeared with a Laughing Cow Garlic & Herb cheese wedge. Man I love that cheese! I had some strawberries on the side:

I took my son to school and then went to a room mom meeting. Yup...I'm a room mom for both kids again. :) After the meeting, I went to spin class.

Then it was lunch time. The leftover pizza from Sunday was calling my name! I had two pieces of the veggie one and made a big salad to go with it:

In the salad: mixed greens, butter lettuce, tomatoes, mushrooms, red onions with Girard's Light Champagne Vinaigrette. Then I spent the rest of the day organizing photos, uploading videos from my Flip, getting room mom stuff done, etc. Whew!

After I picked my son up from school, I cut up some watermelon for a snack:

Now I'm just waiting for my husband to get home so I can make dinner. I'm hungry!!

137.8...and a pizza party!

After yesterday's iphone fiasco, I poured myself a glass of vino to calm my anger/frustration:

Ahhh....much better!! Then it was time to get to business...homemade pizza! The sauce:

That's Cathi's secret tomato sauce...not sure if I can share the recipe yet. I made the dough in the late morning and stuck it covered in the fridge to rise. Here is it all ready to go:

I actually made two bowls of dough.....here they are in the pans ready to hit the oven:

I baked the crusts for 8 minutes and then applied the sauce and toppings. One was just cheese and the other had onions and green bell peppers:

I ended up having one more slice of pizza after this picture was taken. The dough tasted good but it was a little too thick and not crispy enough for my liking. I need to do some tweaking on it and then I'll post the recipe.
While I did the dishes and cleaned up, everyone made S'mores:

I did not partake. I had indulged enough already. :)

This morning my husband decided to take my son to school (my daughter doesn't start for two more weeks) so I leisurely got ready this morning. With my coffee, I had a light wheat English muffin with Barney Butter and some watermelon:

I'm really enjoying the watermelon this year. So juicy! I paid bills and cleaned up some desk mess and then went to both Cardio Muscle and Zumba classes. I was ready to workout this morning and was in a great mood (could it have been my leisurely morning?) so I really rocked both classes. Love that feeling!

I changed and grabbed Subway for lunch...standard turkey on wheat:

I was on the hunt for bulletin boards to put inside my pantry to organize school papers, restaurant coupons, etc. I went to a few different stores and finally decided to buy them at Target. I also got some hooks to hang up backpacks and lunch boxes.

My daughter and I picked up my son from school and then I came home to have a snack:

Fiber One and Kashi Honey Sunshine cereals with blackberries and almond milk. I was still hungry so I had some (a lot) of Wheat Thins. Then it was time to get to work on hanging the boards and hooks. After a lot of measuring and realizing I (still) don't know how to work my drill, I rolled with a hammer and nails and it got the job done just fine (I think). I hope my dad isn't reading this....he'd be rolling his eyes right now. I have always been afraid of using a drill....nothing has changed.

I have dinner with a friend tonight so I need to get dressed. Hope everyone had a nice Monday?

137.0....Fried Goodness!

Last night's Couple's Mixer in our neighborhood was a blast! Everyone brings a hearty appetizer and a bottle of wine to share. It's always exciting to see what dishes everyone brings!

When we last left off, I was getting ready to go to the mixer. The avocado egg rolls were all rolled up and waiting in the fridge. Time to fry!

I just realized that I didn't take a picture of the finished product! Well, check out the last time I made them. It looked just like this and you can find the recipe there too!

Our friends, Erika and Robert, were hosting the mixer this time. As soon as I arrived, I poured myself a glass of Chardonnay:

I had two glasses of Chardonnay and one glass of Cab over the evening. Erika did such a beautiful job of setting everything up and the weather was beautiful!

I tried one of everything! The food was so delicious! I'm so sad that I didn't take a picture of the dessert. There were cookies, cheesecake, lemon bars, brownies....but I decided to have one thing: a huge slice of Red Velvet Bundt cake with Cream Cheese Frosting. It was a glorious piece of cake, trust me. :)

When I woke up this morning, all I wanted (besides coffee) was eggs and cheese. I decided on a egg beater burrito. I had a coupon for a free package of Kraft's 100 calorie cheese packs so I decided to throw one of the packages in with my eggs. I'm glad I had a coupon because those babies are expensive. It was like $4 something for 5 little packages of cheese. No thanks...I'll cut my own.

It did the trick....perfect! Then it was time to hop in the shower and get ready for my family to come over. I decided to grill the hot dogs inside since that was all I was going to put on the barbecue..I didn't want to turn the barbecue on just for that. I reheated the chili I made yesterday:

I had one hot dog with chili, mustard, cheese and onions as well as my favorite cole slaw. Delicious lunch!!!! I was tempted to go for a second chili dog but I restrained myself.

Then it happened.....my daughter came running outside with my new iphone(!!) and.....

dropped it. Yes. It shattered. OMG.

Off to the Apple store I went where I had to have it completely replaced! AHHHHHH!!

I got home, still mad/frustrated/upset/angry/irritated/etc, and my hubby wanted to take everyone to the horse races. I politely declined, expressing my need to update my new iphone with EVERYTHING....contacts, pictures, everything. Ugh.

Now I'm finished and feeling better (could it be the wine I'm drinking? Sorry no picture). Everyone is on their way home and I need to get dinner going (homemade pizza!). Good night all!

I had a list of things to do this morning so I got right to it after I woke up. I made chili for tomorrow's barbecue using one of my favorite recipes:

After finishing up the laundry, I made breakfast. Egg beater sandwich with swiss & cheddar cheese on a light wheat English muffin with strawberries on the side:

After breakfast I got myself and the kids ready and I took them to Pump it Up for a birthday party. I had some veggies and dip and a piece of cake while I was there. It's so hard for me to resist birthday cake!!

After we got home, I began making Cheesecake Factory's Avocado Egg Rolls for tonight's couple mixer:

Right now they are chilling (literally) in the fridge waiting to be fried. I already leftovers of the sauce from the last time I made them in freezer so that made it that much easier! I need to get ready for tonight now. See y'all later!

138.4...Viva la Comida!

A fun time was had by all at Ladies Night last night. We went to Miguel's Mexican restaurant nearby. I enjoyed it the last time I went there and was excited to try it again. We sat outside on their patio and enjoyed a beautiful summer evening. I was debating between a margarita or wine...the wine won!

I know I should be keeping it real with the margaritas but I just wasn't feeling it. I did have some chips and salsa but I didn't go crazy with them. For my entree I ordered the Jalapeno Shrimp. There was shrimp, peppers and onions covered in a jalapeno cream sauce with rice and beans on the side. It also came with flour tortillas:

I loved it! It was so delicious!! Check out the ladies:

No we did not all decide to wear white pants. :)

I had so much fun with the girls! Can't wait to do it again next month!!

Breakfast this morning was an omelet made with egg beaters, spinach, onions, zucchini, low fat Swiss cheese. I had some tomato slices on the side. I poured Cholula all over it after the picture was taken. :)

After taking the kiddos to school and camp, I went to Cardio Muscle class. I didn't get as good a workout as I usually do but you can't win em all. At least I got something! I came home and got ready for a special lunch with the hubby. We had an appointment at the bank to open a new account...it just so happened that Harry's Bar & Grill was nearby! I was so excited to eat there again! While waiting for my husband to arrive, I had a couple pieces of bread dipping in olive oil and balsamic vinegar:

I also enjoyed a refreshing glass of Chardonnay:

I ordered their salmon salad. Check out the size of the salmon!

Yes that is a big piece of salmon alright! It came with mixed greens, tomatoes, avocados...all dressed with olive oil and lemon.

I didn't like it obviously. :) Hubby wanted dessert. Me being the giving person that I am, I had to help him out with it.

It was an apple tart/cake with vanilla ice cream and caramel sauce. Delicious!

After our meeting at the bank, I ran several errands and then picked up the kids. After dropping them off at home with the hubby, I went to get my nails done. Afterwards I stopped at the grocery store quickly to get some stuff for this weekend. We are having family over on Sunday for a barbecue.

I came home and started the laundry. I also got dinner going. I decided to finish the bottle of Trader Joe's Thai Red Curry sauce that I had in the fridge. I bought a bag of stir fry veggies at the store and added some chicken. I microwaved a bag of Trader Joe's brown rice and dinner was served!

After getting the kids to bed, hubby and I relaxed it the hot tub for a bit. That was nice! Now he's asleep and I'm trying to finish up the laundry and catch up on blogs!

Weekend plans? Besides Sunday's barbecue, I am taking the kids to a birthday party tomorrow. Hubby and I are going to a Couple's Mixer in our neighborhood tomorrow night. I'm excited about that!

I really enjoyed my breakfast this morning. I microwaved some egg whites until they became a "puff" and put them on a wheat English muffin with some Cholula, low fat Swiss cheese, spinach and tomato slices. I had some strawberries on the side:

After taking my son to school and my daughter to camp, I went straight to the gym. Since Zumba is cancelled this week, I did 45 minutes of walking/running on the treadmill. I came home and showered and cleaned up around the house.

For lunch, I had the rest of the tuna salad I made in a whole wheat tortilla with mustard, lettuce and tomato. On the side I made a salad tossed with balsamic vinaigrette:

I was feeling like something sweet afterwards so I had a piece of the pound cake I made over the weekend:

That cake is seriously to die for. I wish somebody here would finish it so I don't have to keep looking at it every time I go into the kitchen!

I picked up my daughter from camp, came home and caught up on some email. We went to pick up my son from school at 3. Since then, I've been paying bills and trying to organize my desk (again). How do these things pile up so fast?

Tonight I have Ladies Night (!!) at a Mexican restaurant so I wanted to have a snack to hold me over. Something filling so that I won't (hopefully) attack the chip basket like a hungry beast. In comes peanut butter:

How do you like tuna salad (if you eat it)? I like mine the old school way: with mayo, celery and red onions. I like there to be yellow mustard on the bread too. I thought that sounded weird at first but it's really good!

Everyone had a blast yesterday at the La Costa hotel pool! They have great water slides and a fabulous shallow pool for the little ones. For dinner, we all went to Souplantation. I had my standard salad except that I put hard boiled egg on it this time:

I also had a bowl of the low fat chili (love that stuff) and a slightly excessive amount of pizza bread. I'm slightly obsessed with that stuff. My husband and I always joke that if they stopped making that pizza bread, they would go out of business. :) They had my favorite dessert there: Lava Cake. When it came time to go get it, it was gone and wouldn't be ready for 30 more minutes. Maybe it was a sign I shouldn't be eating lava cake? I settled for the frozen yogurt with caramel & chocolate sauces as wells as some peanuts:

For breakfast, I decided on Fage yogurt mixed with sugar free strawberry jelly, Fiber One cereal and blackberries:

After I took my son to school and my daughter to camp, I went to Zumba class....at least I thought I was going. Apparently, the Zumba instructor is at a Zumba conference all week so class is cancelled this week. BOO! I hadn't worked out since Saturday so I needed to do something! I decided to do 45 minutes on the "dreadmill" and call it a day.

I quickly showered and took my lunch to go since I had to get to my wax appointment right away. I packed a sliced apple and a Flat Out Wrap with Better N Peanut Butter:

After my appointment, I went to Golden Spoon for some frozen yogurt. I didn't take a picture because I ran into a mom from the preschool with her friend that I didn't know and they asked me to sit with them. I didn't want to have to explain about the bloggie. :) I did have a small with Graham Cracker, Cookies n Cream and Vanilla Custard flavors. It rocked my face off!

After getting home with the kiddos, I crossed a couple of things off my never-ending To Do list. I needed to get dinner going early tonight because I have to go to Back To School Night at my son's school. I pulled some Four Cheese Mac & Cheese leftovers out of the freezer and heated that up. I made a big salad to go with it: mixed greens, butter lettuce, cucumbers, red onions, mushrooms all tossed with a balsamic vinaigrette:

I put Cholula all over the pasta after this picture was taken. :) I was worried the pasta would be dry when reheated but it tasted great!

For those of you bloggies...do you feel embarrassed when you take pictures of your food? I don't so much anymore....it's just a habit at this point. I sometimes still feel weird when I take pictures of my sandwiches at Subway....I feel like everyone in line is looking at me like I'm strange.
