Hello!!! How's everyone's week going? Breakfast this morning was Fage yogurt with some sugar free strawberry preserves mixed it, Fiber One cereal and berries:

After taking the kiddos to camp, I made my way over to Great News for a cooking class. You know I'm a happy girl on cooking class days! Today's class was entitled: Finger Lickin' Ribs. Non-meat eaters....please look away. :)

First up was Maui Short Ribs with Mango Sesame Spinach Salad:

I loved this! The ribs were so juicy and the marinade was delicious! The spinach salad went perfectly with it.

Second was Country-Style Pork Ribs with Peach Chipotle Sauce served with Chipotle Potato Salad with Cilantro, Fresh Corn and Red Onion:

The ribs were good....I actually liked the sauce (for those of you who don't know me well....I don't like fruit with my "food"...just by itself or in a dessert). But what really stood out was the potato salad.....FABULOUS! I will make this at home for sure!!!

The next plate has two different rib recipes on it: Asian Lime Sauced Baby Back Ribs with Sweet Spice Rub (top one) AND Pork Spareribs with Sweet Cola Sauce and Brown Sugar Rub:

I wasn't a big fan of the Asian baby backs. The sauce was a little too heavy on the vinegar for me. I did like the spareribs with the cola sauce...they were quite yummy!

Because no cooking class is complete without a dessert...they served us some vanilla ice cream with a caramel coffee sauce.

YUM! (Duh!)

After class I had some time to spare so I went to mall to look around. I did find a few cute things at Nordies. :) I grabbed an iced tea at Starbucks (I really wanted Sees Candy but I restrained myself...after all....I did eat like 1000 calories in ribs earlier) and went to pick up the kids. Came home, went on great walk with a couple of friends up and down our "fire hill" THREE times. I will be shocked if I don't feel it tomorrow! That hill is steep!!!!

We took the kids to Pei Wei for dinner. They go nuts every time we go there. I kinda like it too. :) I ordered my usual: kid's honey seared shrimp with brown rice and veggies....and a ton of their spicy hot sauce:

Now it's time to put the kids to bed and hit the hay myself. That hill pooped me out!

Have you heard of the GM Diet? A couple of my friends are currently on it and have lost like 5lbs in 3 days so far. Have you heard of this? Done it? What are your thoughts? I'm always wary of "lose it quick" diets but it's hard not to consider when you see if working for people you know! ;)

Happy Monday! I hope it's been treating you well! It was cloudy all day here so it made me feel lazy....but lazy I wasn't!

Breakfast was another slice of Hungry Girl's Ginormous Omelette with salsa and a side of strawberries and blackberries:

After taking the kids to camp, I did double duty at the gym: Cardio Muscle class and Zumba. I felt the weather and Monday morning blues slowing me down but I fought it hard and won...I think. :) I'm pooped!

Lunchtime couldn't come soon enough! I made a wrap with turkey slices, low fat swiss cheese, lettuce, tomato and mustard wrapped in a wheat tortilla with a giant salad on the side:

I paid bills and then headed off to pick up the kids. I had a snack size 3 Musketeers bar on the way. Mmmm....those are good!!

When I got home, I worked on my picture project some more. For dinner I had another serving of the Thai Coconut Curry Shrimp and froze the rest for another time. I mixed it with brown rice, green beans and Sriacha. :)

I had dinner with a glass of red wine. Ahhhhh.......

Tonight is the Bachelorette at Lisa's house......

Where has been your favorite place you've traveled to? I would have to pick Italy....beautiful with fabulous food!

I hope everyone had a great weekend!!

For breakfast I tried a new recipe: Hungry Girl's Ginormous Oven-Baked Omelette. I had mine with some salsa on the side.

It was pretty darn tasty!!! I have 3 more servings for breakfast this week. I like how all I have to do is heat it up! After breakfast I took the kids to buy new shoes. They are so excited about their new shoes...with laces. They don't know how to tie them but I guess now's the time to start! Should be interesting for sure.

I took them to McDonalds for lunch. I ate a giant iced tea while they had their Happy Meals. My daughter didn't want her last 2 chicken nuggets so I couldn't let them go to waste right? :) Those nuggets are SO good in the hot mustard sauce. We came home and I heated up some more Fiesta Chicken & Rice with extra veggies, cilantro, tomatoes and salsa:

We chilled for a bit and went over to Dina's house so the kids could swim and play. Everyone had a great time and Dina and her husband made a super delicious salad for dinner:

Grilled chicken on a bed of greens with cucumbers, sliced potatoes, freshly grilled corn, grape tomatoes (from their garden!), hearts of palm dressed in balsamic vinaigrette. SO good! I took this picture before I added two slices of fabulous bread that was also grilled. I had a piece of my sugar cookie bars that I brought over too. Those things are evil.

Now the kids and I are in our PJ's about to head off to bed.

Last night, I had another one of the Skinny Cow ice cream cups: Strawberry Cheesecake:

I liked this flavor too! These little ice cream cups are great!!

Breakfast this morning was an old favorite: light wheat English muffin with Barney Butter and a side of strawberries:

Then it was off to spin class. I love Saturday's spin class!! I showered when I got home and then began making lunch. I made a "pizza" on a La Tortilla Factory tortilla with ricotta cheese, mozzarella cheese, sauteed onions, garlic powder, basil, tomatoes and salt and pepper. On the side I had a salad with balsamic vinegar:

I haven't tried a pizza on a tortilla before and I've been reading about it on blogs all over the place so I decided to give it a try. It was pretty good....I think I'll try good ole marinara and cheese next time. Doesn't do it for me like a regular pizza does but it gets the job done in a healthier way. :)

The rest of the day I spent working on my new project: getting all of my pictures saved from the THREE computers in our house to CD's. I haven't ever done this so you can only imagine the amount of pictures I have to do. Agh! I will be happy when it's done!

Dinnertime rolled around and I tried another new recipe: Thai Coconut Curry Shrimp.

I served it with brown rice and green beans. It was pretty darn tasty!!! I promised the kids that if they cleaned up the ginormous mess they made today I would take them to get frozen yogurt.
After a lot of coaxing, pleading and a little shouting, the room was clean and we were ready to go to Sweet Things!

This time I had Cupcake, Belgian Chocolate and Cookies n Cream. Not too shabby. :)

The weekend is here! Whoo hoo!!!

Last night I decided to have a peanut butter sandwich for dessert:

Why is peanut butter so good? I had a great sleep last night except for the earthquake at 10:30PM. Ugh....

Breakfast this morning was so delicious! Egg white omelet with zucchini, red bell pepper, spinach, onions, low fat cheddar cheese topped with salsa:

I took the kids to camp and then went to two classes: Cardio Muscle and Zumba. Wow...I burned a ton of calories. I went to Subway for lunch....standard turkey on wheat:

Then I grabbed some groceries for the weekend, came home to put them away and then I decided frozen yogurt was calling. Golden Spoon here I come! My flavor choices today were Cake Batter, Chocolate Caramel and Kahlua Cream. Be still by heart.

I picked up the kiddos and came home to do the normal weekend laundry. While making dinner, I decided a glass of wine was in order:

For dinner I made tilapia, Spanish Style Quinoa and green beans:

What a delicious dinner! I have been meaning to try that quinoa recipe for awhile and I'm glad I did. Next time I would make it a little spicier though. :)

Now I'm watching Nick Jr. cartoons with the kids. That's how I roll on Friday nights. :)

Hello! Happy almost Friday!!

Yesterday I snacked on a Fiber One bar on the way to pick up the kids from camp:

We chilled at home for a bit and then met some friends at our club for dinner. We had some wine:

It was "Family Night" and there's a special menu each week for it. We were served a Greek Salad served family style:

There were three choices for our entrees: Lasagna Bolognese, Chicken Parmesan and Spaghetti and Meatballs. I decided that the spaghetti was the most healthful of the three so that's what I rolled with:

Delicious!!! Hubby ordered a chocolate chip cookie for dessert and it was warm so of course I had to have some!

Then we called it a night. :)

This morning's breakfast was a light wheat English muffin with almond butter and a side of strawberries:

I took the kids to camp and then made my way to San Clemente (about an hour away) to get my hair done with my friend Dina. Dina thought I needed this picture on my blog for sure:

We went across the street to this little cafe for lunch. I had a tuna sandwich on whole wheat with a cup of navy bean soup:

Hit the spot! Then it was off to pick up the kiddos. I came home and went for a run/walk around the neighborhood. It was fabulous!

Dinner was Fiesta Chicken and Rice that I had in the freezer. I added some black beans, sauteed onions, bell peppers, zucchini as well as fresh tomatoes, cilantro and some salsa:

Yum...great additions. :) That all folks!

Do you color your hair? I've been coloring my hair since I was 18. :)

139.4 yesterday...138.8 today

Wow! I have a ton of yummy eats to report about!!! Let's get caught up shall we??

Monday's night's dinner was nothing too exciting. Some leftover Beef Noodle Bake that I pulled out of the freezer. On the side were some sauteed veggies: zucchini, mushrooms, onions, bell pepper, spinach and garlic:

I went over to Lisa's to watch The Bachelorette. I brought some carrots and roasted red pepper hummus. I sampled a little bit of everything there: my hummus, some crackers and cheese, part of a pumpkin muffin, a little Asian chicken salad from Pei Wei, chicken & brown rice and one of Lisa's famous brownies. So much for self control huh? :) I was NOT going to have one of the brownies but Dina informed me that they were Lisa's best batch. How could I say no? At least they are small brownies. Sorry no pics guys. I was involved in the show. I can't believe how cheesy the show is and now I'm hooked. Oh well. :)

Breakfast yesterday was non fat, plain yogurt with Fiber One cereal and strawberries:

I took the kids to camp and headed over to Starbucks to wait until my cooking class started. I had some fruit and an iced tea:

Yesterday's class was a shorter "lunch style" class and was entitled: Picnic in the Park. Our lunch was: Deviled Eggs with Bacon, Al Fresco Grilled Tandoori Chicken Breasts with Chutney and Curried Rice Salad with Artichoke Hearts, Olives and Peppers:

Everything was so delicious!! The deviled egg was the best one I've ever had! I cannot wait to make these at home for a party! I LOVED the curried rice salad. This would be perfect to bring to a potluck/picnic.

Dessert was Cream Cheese Swirl Brownies with ice cream:

OMG. This brownie was beyond fabulous! I will be making these soon for sure! What a great class!!!

After class I went to Costco. Nothing exciting to report there...just stocking up on the regular stuff. I picked up the kids from camp and came home and threw my exercise clothes on and went over to Lisa's to do the P90X Kenpo video. I got in a fabulous workout! Then I came home, changed (again!) and hubby and I met some friends for dinner at Georges at the Cove in La Jolla.

Georges never disappoints. They view is magnificent and the food is always fresh and delicious. It's a must if you are ever in La Jolla. I had a glass of Chardonnay while we waited for our friends to arrive.

Hubby scored the best table in the restaurant for sure! Check out our view!

It was so nice watching the sun set!

I ordered the Baby Greens salad to start:

Upon recommendation from the server and one of our friends, I went with their special: Halibut on sweet corn with grape tomatoes and snap peas:

Goodness gracious this was delicious. I wanted to lick my plate. I have a feeling that I'll be thinking of this dish for awhile!

Dessert wasn't too shabby: Warm Chocolate Cake with Dulce de Leche ice cream:

More goodness. I went to sleep a very happy camper!

Breakfast this morning was similar to yesterday. I was so excited to have more blackberries and strawberries that I had to do it again:

This time I rolled with Fage yogurt instead of the plain yogurt. After I took the kids to camp, I went to Zumba. What a great class today!! I burned 525 calories. Nice! I came home a sweaty beast.

I cleaned up and made lunch. Trader Joe's pea soup and a turkey and swiss sammie on a bagel thin. I put mustard, lettuce, tomato and cucumber on the sandwich:

My car needed a couple of repairs so that's where I'm at....blogging from the car dealership. I'm too cool for school.

Tonight is "Family Night" at our club so we are going there with the kiddos with some friends for dinner. We did that last week and really enjoyed it so we are trying to make it a regular Wednesday night thing.

Are you watching the World Cup? It's on right now in the lounge I'm in....this is the first time I've watched it. I'm not a soccer fan....sorry!

We had such a nice Father's Day dinner at my favorite restaurant, Firenze, last night! Mo, you guessed right! We sat outside on their patio and enjoyed the warm evening. Hubby and I split a bottle of Chianti:

They had live music outside! What a treat!

Hubby and I split our regular salad: Chopped Caesar:

For my entree, I had the Linguine with Clams with red sauce (extra spicy please!):

It was AMAZING as usual. I love you Firenze.

I was out of fresh fruit this morning (!!!) so I had to improvise. Fage yogurt with Fiber One cereal and dried cranberries and raisins:

YUM!!!! I love dried fruit. I wish it wasn't so high in calories though. Boo! I took the kids to their first day of summer camp. It was a little rough as they were unsure of their new camp but it all worked out. :)

I went to Cardio Muscle AND Zumba class. I got my calorie burn on for sure!!! Afterwards I came home, changed and put lunch together. Turkey & swiss sammie on wheat bread with tomatoes, onions, lettuce, dijon mustard and cucumber. On the side was a ginormous salad with all sorts of veggies and Girards Light Champagne vinaigrette (my favorite bottled salad dressing).

I had a serious chocolate craving so I satisfied it with a Weight Watcher Giant Fudge bar:

I went to my dentist appointment and then picked up the kids from camp. I ran to the grocery store to replenish my fruit supply among other things and had one of these Fiber One bars along the way:

And that's where I must leave you folks. Gotta get dinner going! I'm going to Lisa's to watch the Bachlorette again tonight. Have a great evening?

Does anyone else watch The Bachlorette? Who's your favorite guy? Last week was my very first time watching the show ever so I'm not sure who I like yet. :)
