Whew! What a day!!!!! I walked out the door at 8:20 and didn't get back until 5PM. I'm pooped!!

Breakfast was Fage yogurt with All Bran Bran Buds cereal, strawberries, blackberries and raspberries.

I took the kids to school and went to pick up the cake for my son's end of the year party. I had some time to spare so I popped into Starbucks to read a little. I didn't buy anything but I did have my Starbucks mug with me so does that count? :)
On the way to pick up my son for the party, I had an apple in the car:

The party turned out well and I think everyone had fun. :) I had a half of a wheat bagel with hummus and cucumbers on it while I was there. I did taste a bite or two of my son's piece of cake just to make sure it tasted good. It did. :)
My son and I picked up my daughter from school and went to their swim lesson. This was my daughter's first swim lesson and she did great! Afterwards I ate a flat out wrap with Better N Peanut butter while driving to our next stop:

We went to a playdate with the children from my son's new Kindergarten class for the fall. Afterwards, we were all ready to finally go home!! Somehow I got my butt to the gym. I did some running/walking on the treadmill and some upper body weights. I really struggled though....I just wasn't feeling it but I'm glad I did something!
Dinner was quick and easy: Chicken Vindaloo:


I had mine with brown rice (white rice for hubby) and peas. It a super simple recipe:
Chicken Vindaloo for 2:
1 medium onion, diced
1 Tbsp vegetable oil
2 chicken breasts cut into chunks
2/4 cup water
4 Tbsp Red Curry Paste (I keep a jar of it in my fridge)
1/2 cup diced canned tomatoes
Saute onion in oil and then add chicken and cook until almost done. Stir in Red Curry Paste, cook for one minute. Add tomatoes and water and simmer uncovered until the chicken is cooked all the way through, about 5 minutes.
It was great! Spicy and fabulous! Now I cannot think of anything else except my bed. Goodnight all!
What is your all-time favorite movie? Mine is Pretty Woman. :)

  3. the chicken recipe looks delish. i have been wanting to pick up some red curry past to make a shrimp recipe, so i will definitely try this! my all time fav movie is serendipity!!! love it~

  4. Pretty Woman was my favorite movie for so many years. I think I have literally seen it over 30 times. Now, I'd say it's a toss up between PW, Wedding Crashers, and the Notebook.
