I hope everyone had a great weekend!!
For breakfast I tried a new recipe: Hungry Girl's Ginormous Oven-Baked Omelette. I had mine with some salsa on the side.

It was pretty darn tasty!!! I have 3 more servings for breakfast this week. I like how all I have to do is heat it up! After breakfast I took the kids to buy new shoes. They are so excited about their new shoes...with laces. They don't know how to tie them but I guess now's the time to start! Should be interesting for sure.
I took them to McDonalds for lunch. I ate a giant iced tea while they had their Happy Meals. My daughter didn't want her last 2 chicken nuggets so I couldn't let them go to waste right? :) Those nuggets are SO good in the hot mustard sauce. We came home and I heated up some more Fiesta Chicken & Rice with extra veggies, cilantro, tomatoes and salsa:

We chilled for a bit and went over to Dina's house so the kids could swim and play. Everyone had a great time and Dina and her husband made a super delicious salad for dinner:

Grilled chicken on a bed of greens with cucumbers, sliced potatoes, freshly grilled corn, grape tomatoes (from their garden!), hearts of palm dressed in balsamic vinaigrette. SO good! I took this picture before I added two slices of fabulous bread that was also grilled. I had a piece of my sugar cookie bars that I brought over too. Those things are evil.
Now the kids and I are in our PJ's about to head off to bed.

Yum! I made that omelet a while back and have forgotten about it - must get it back in the rotation! Mine was probably yesterday - just chilling with my little family after a busy weekend!
ReplyDeleteMmm, so many healthy and pretty eats :) Food-wise my favorite part of the weekend was a yummy organic chicken fajita wrap I had for lunch Saturday and the Mint Chip Italian that followed :) I had a lot of fun watching the USA game (the bars are crazy in NYC!), but the outcome: Not fun :(
