145.8…In The Thick Of It

For the last 24 hours or so, I have been in the thick of Thanksgiving cooking and preparation. I have 31 people coming over Thursday and I like to have as much done ahead as possible so I can enjoy the day and hang out with my family.

Saturday night my husband and I went out just the two of us. We went to dinner at Firenze. We shared the Burrata which came with roasted tomatoes, pesto and toast points. Was incredible!

For my entree, I ordered one of my favorites: Chicken Piccata:

After dinner we went to see "Gone Girl". I read the book and was excited to see the movie. It didn't disappoint….great movie!

Sunday I slept in (yes!) and enjoyed a cup of coffee while getting ready for the Chargers game. It was a great game with the Chargers coming out victorious. I tried not to eat much while I was there because dinner was going to be incredible.

Burger night! Yes! We went with some friends and had a great time. It never gets old. 

Breakfast Monday morning was scrambled egg beaters with leeks and gruyere cheese.

My husband took the kids to school and I ran a ton of errands including Costco which was beyond packed. I was so thankful to get out of the there. 

Lunch was tuna salad, veggies and ranch dressing.

The rest of the afternoon was spent cooking. I whipped up four batches of Homemade Gravy. It starts with a lot of onions….especially if you are making FOUR batches.

Last year I strained out the onions but this time I blended it all together. Definitely better leaving all the onions in!!!

Dinner was Trader Joe's Orange Chicken (the best!), white rice and broccoli.

Breakfast this morning was strawberry Chobani yogurt, Almond Coconut Granola and strawberries.

After I dropped the kids off at school, I came home to get cooking. I'm making my sister in law's stuffing this year. I had to cut FOUR loaves of bread into cubes.

I feel like I'm staring a cafeteria or something. :)

Lunch was a turkey sandwich, veggies, ranch and Pringles. My daughter needs a Pringles can for a school project so the Pringles have to get eaten somehow. :)

145.8…The Mission Continues

Going along with the "what's left" theme, I defrosted and heated up some Buffalo Chicken Chili that I had in the freezer. I forgot just how good this chili was!!

To go with the chili, I whipped up my favorite cornbread, Buttermilk Cornbread.

Breakfast Friday morning was Lucky Charms and almond milk. I really love Lucky Charms. :)

My husband took the kids to school so I was able to get some stuff done around the house before heading off to pick up my daughter from school. They had half day so her grade planned a get together at the park. (My son went over to a friend's house). I had two slices of pizza at the park. Eventually it was time to take my daughter to her horse back riding lesson and pick up my son and take him to basketball practice.

I had had some leftover meat sauce form the World's Best Lasagna I made a few weeks ago so I heated that up along with some penne for dinner Thursday night.

It's a really good sauce by the way. It was great with the lasagna and tasted fabulous on the pasta! I made a salad to go along with it.

Yesterday's breakfast was pineapple Chobani yogurt, Almond Coconut Granola and strawberries.

After I dropped the kiddos off at school, I went to a meeting. Lunch was a turkey sandwich, veggies and ranch.

Then it was time to get ready for a friend's wedding at Scripps Seaside Forum in La Jolla. The weather was perfect for the beautiful ceremony by the beach. After the cocktail hour, it was time to sit down for dinner. The meal started with mixed green salad with cranberries, pears and almonds:

The main course was served family style. It consisted of top sirloin, cornish game hens, sea bass, broccolini and potatoes au gratin:

We danced for a bit and then headed home for the night.

Breakfast this morning was a toasted English muffin with a fried egg and cheddar cheese.

We took my son to his basketball play off and championship games. Their team won first place!!!

Lunch was the rest of the Buffalo Chicken Chili.

I'm seriously on a mission to clean out everything from my fridge. The Thanksgiving turkey comes out of the freezer to defrost tomorrow. I need to make room!

145.8…What's Left?

 It's that time of year where I begin trying to use up what's in my freezer and fridge to prepare for the craziness in my house that is Thanksgiving. I saw that I had taco meant and Spicy Rice in the freezer so it was obvious that tacos were happening on Monday night.

Breakfast yesterday morning was an English muffin with peanut butter and half a grapefruit.

After taking the kids to school, I finished up a project there that I had been working on. Lunch was a turkey sandwich with veggies and ranch.

I went to an appointment, picked up the kiddos and came home for the night. I saw that there was a container of leftover pasta in the fridge, so guess what dinner was?

There's leftover leeks and gruyere cheese from the Leek, Potato & Gruyere Frittata so that went into my scrambled egg beaters this morning.

After I took the kids to school, I went to get my hair done. Yes!!! Lunch was at home again (use it up!):

I've started to make a pretty good dent in the fridge….just in time to fill it to the gills next week!

Busy. That basically describes my weekend. It was one event after the next. I'm not complaining….all were fun events complete with fabulous food!

Friday night we had dinner with friends at The Pony Room at Rancho Valencia. We all shared a bunch of appetizers….

Saturday morning, I reheated some of the Leek, Potato & Gruyere Frittata for breakfast.

Felt like such a fancy breakfast and all it took was a minute in the microwave.

After breakfast, my daughter and I hit the road for Los Angeles. It was my sister in law's baby shower and we were so excited to help her celebrate.  We arrived at Joe's Restaurant about two hours later and the party got started!

We enjoyed a delicious lunch, complete with choice of appetizer and entree. I started with the Curried Lentil Soup:

Right after the shower we had to head back to San Diego for an event for my son at the school. As soon as that was over, we went to Mia Francesca for dinner. My husband and I shared the Caesar salad:

I ordered from their specials….it was a dish with cheese raviolis in a tomato sauce topped with steak and arugula.

After we took my daughter to a birthday party, it was off to the Chargers game! We played the Raiders and we won. Yes!!!! I didn't eat much at the game because I wanted to save room for Burger Night at our club!!

After I took the kids to school, I had a meeting. My plan was to go to the gym after but several other things came up a the school so that took care of that idea. I had enough time to run my errands and stop at Subway for lunch before having to pick the kids up from school.

I feel like I haven't stopped running today. I hope tomorrow is a little more chill (here's to hoping!).

145.0…Leek, Potato & Gruyere Frittata

Every year I host a Stella & Dot jewelry party.  My friends come over and we shop and eat delicious things. Every year I make a new frittata recipe. Last year was the Smoked Salmon Frittata and I've made the Potato & Boursin Frittata a couple of times. The frittata I made today, I made once a long time ago and felt it was time to bring it back!

 Leek, Potato & Gruyere Frittata (Serves 4-6)

Recipe adapted from Williams-Sonoma


3 Tbsp. unsalted butter

6 oz. small red potatoes, sliced 1/8" thick

Salt and freshly ground pepper, to taste

2 leeks, white and light green portions, rinsed well and thinly sliced

5 eggs

3 Tbsp heavy cream

2 oz. Gruyere cheese, shredded

1 Tbsp. finely chopped fresh flat-leaf parsley


1. Preheat oven to 375 degrees.

2. In an 8 inch nonstick skillet over medium-high heat, melt 1 Tbsp. butter, Add potatoes, salt and pepper. Cover with lid; cook, flipping potatoes occasionally, about 8 minutes. Transfer to bowl.

3. In same skillet over medium heat, melt 1 Tbsp. butter. Add leeks, salt and pepper. Cook, stirring occasionally, 6-8 minutes. Transfer to a separate bowl.

4. In another bowl, whisk eggs and cream. Stir in cheese, parsley, potatoes, salt pepper and all abut 2 Tbsp. leeks. Set skillet over medium heat, melt 1/2 Tbsp. butter. Add egg mixture; cook until just beginning to set, about 4 minutes, using rubber spatula to lift cooked edges and allow uncooked eggs to flow underneath.

5. Transfer skillet to oven and finish cooking until eggs are set, about 15 minutes.

6. Loosen frittata; slide onto serving plate. Garnish with reserved leeks.

Wednesday night I had to attend an event at the school so I had a limited time for dinner. I had leftover fettucine and marinara in the fridge so that was dinner.
