Happy Halloween!!! I'm posting early because I have a feeling that I'll be too tired to post after tonight's festivities.

Breakfast was a breakfast quesadilla: egg beaters, reduced fat shredded mexican cheese, taco sauce all housed in a whole wheat tortilla. Each bite was consumed with Cholula. So good and very filling....I couldn't finish my side of kids had to eat it for me.

I went to spin class where we did 45 minutes of spin and 15 minutes of abs. Thought it was necessary to burn as many calories today before the chocolate extravaganza happens later!
When I got home I made this:

It's hard to tell from the picture but the pan I used had a lovely leaf design on top. The verdict: this is one yummy bread!!!! I'm going to serve it later with Trader Joes pumpkin butter. I'll let you know how it goes. I can't imagine it would be bad!
I was feeling like soup for lunch so I had this:

Alongside was light wheat toast with a Laughing Cow original cheese on it. The soup was very filling...I only ate half. It was ok....not the best but not the worst. It's the first time I didn't go "nutso" over one of Amy's products.
So now I'm sitting here with curlers in my hair waiting for my family to arrive so we can begin our Halloween festivities!

Ok let's keep the scale under 140. :)

Breakfast was Trader Joe's Strawberry Yogurt O's again. :) Alongside were strawberries. I decided that putting them in my cereal detracts from the deliciousness of the O's.

After dropping the kids at school, I went to Step and Sculpt class. An hour of cardio and weight lifting later...I was a sweaty mess. Just the way I like it!! I cleaned up and went over to Bloomingdales to pick up my pre-sale stuff (AMA dress!) and had lunch there: a bowl of pea soup and a half a chicken salad sandwich on wheat.

YUM!! I went shopping for awhile and then ran over to Trader Joes to pick up some groceries. I had a non pictured latte. I usually drink a double skinny vanilla latte but I was feeling in the pumpkin mood so I asked for a little pumpkin syrup instead of the vanilla. Maybe it was the extra shot of espresso but it tasted funny to me. :(

When I came home I started the laundry and made some cute pumpkin shaped chocolate chip cookie "lollipops" for Halloween.

While getting dinner ready I indulged in this:

Dinner was this recipe for Baked Turkey and Jack Cheese Chimichangas. I have a bunch in the freezer from the last time I made them so I just defrosted a couple. I cooked up some zucchini, onions and corn to go with it. Another lopsided pic:

After getting everything cleaned up and more laundry done, I decided to break into the Halloween candy bag early and have these with my two leftover points: favorite candy!!!! Happy Friday everyone!

This morning's breakfast was a slice of Ezekiel with egg beaters and tabasco. A honeycrisp apple completed the meal.

I dropped the kids off at school and picked my mom up at her hotel and went over to Nordstrom in Escondido. I always forget why I don't go to that mall (since it's close to me) until I get there.
Not a whole lot going on over there except Nordstrom. I did manage to find two pairs of reasonably priced boots! Yeah me!

We ate lunch at Nordstrom Cafe and I ordered a half tuna sandwich with a cup of tomato soup with a salad with the dressing on the side. It was yummy but I was still hungry...

There just so happened to be a Sees Candy nearby. Behold milk chocolate molasses chips and the free sample....not sure what it was. :)

We picked up the kids from school and came home and hung out for awhile. I decided to make my White Chicken Chili and cornbread for dinner.

I love this chili! So rich, filling and comforting!!!!! Happiness in a bowl!!!!! The entire pot of chili is gone.... I guess no one liked it. :) I had a glass of wine will cooking it and another glass of wine while eating it. Supreme happiness.

White Chicken Chili

1 T. olive oil
1 cup diced onion
1 yellow bell pepper, diced
1 T. minced fresh jalapeno
1 ½ tsp. ground cumin
1-14oz. can cream-style corn
1-7 oz. can diced green chilies
1 cup chicken broth
1 cup heavy whipping cream
1-15oz can S&W Premium white beans, rinsed and drained (or any small white bean or navy bean)
2 cups shredded cooked chicken
Salt and pepper to taste
1 ½ cups shredded Jalapeno Jack cheese (or white cheddar cheese/jack cheese), divided use

In a large pot heat oil over medium high heat. Cook onion, yellow pepper and jalapeno for 3 or 4 minutes or until softened. Add cumin, corn, green chilies, broth and cream. Bring to a boil, stirring occasionally.
Lower heat and stir in beans and simmer, covered, stirring occasionally to blend flavors, about 10 minutes. Stir in chicken and season with salt and pepper. Heat a minute or two to warm chicken. Stir in 1 cup cheese, stirring until melted. Serve immediately with remaining ½ cup cheese sprinkled on top.

You can do this ahead but put the chicken in when reheating.

An easy way to cook the chicken: put 2 or 3 chicken breasts with bone & skin in a casserole dish, cover with plastic wrap, poke a few holes and heat for 7-8 minutes per pound. When juices run clear, it’s done. Let the chicken cool a little to handle, and then shred away! Enjoy!

My official Weight Watchers "weigh in" is tomorrow. ain't gonna be that great....but that's what next week is for right?

So, I did indeed get hungry last night at 9PM just as I expected. My stomach started really it was "Do I try and fall asleep like this or just quiet the roar?". The roar was quieted with a peanut butter sandwich on light wheat bread.....all while reading my current bed. I'm classy like that.

Breakfast was a return of an old favorite.....Barney Butter on a light wheat english muffin with a 1/2 cup of strawberries. I need to get back to my "breakfast experiments" but I just have not been feeling creative.

After dropping the kids off at school, I went to spin class. We did 30 minutes of spin and 30 minutes of weights: tons of weighted lunges, triceps and abs.

My dad came to town on business and my mom came along today so we got to go shopping! We went to Bloomingdales for lunch. I was distressed to find out that they took my favorite item off the menu: Salmon Caprese salad. The nerve! I was perplexed on what to order. I decided on a chicken sandwich with pepper jack cheese, sun dried tomatoes, caramelized onions and spinach. I asked for salad instead of fries. But when they brought it out.....lo and behold....fries all over my plate. So I got the salad on the side.

I did not touch the fries. Way to go Self Control! I forgot to ask for the salad dressing on the bad. It was too gorpy for me so I only had a couple of bites. Not the most satisfying lunch but oh well......
Moving was quite successful. I'm going the American Music Awards in Los Angeles next month and I've been trying to find a dress for ages and I found one today!! You'll have to wait til then to see the pics. :) I'm super excited about it!!!
After several hours of shopping we came home and grabbed the hubby and kids and went out to dinner. Our original idea was Sammy's Woodfired Pizza (love this place!!!) but the wait was way too long so we ended up at Red Robin. The kids were excited. :) I ended up having the soup and salad combo. I ordered the chili for my seemed appropriate as it was really cold outside!

The chili was actually a little too meaty and strong tasting for my liking. I don't know how else to describe it but "strong". The salad was yummy though!!!!
Not the most healthy day but I'm trying to teach myself to eat the things I like in moderation. No need "to go to town" on yummy foods.....a few tastes should satisfy your cravings. I wish I could say that it works all the time but I'd be lying. I am human after all. :)

So, as I was trying to figure out why the scale is climbing, I consulted the calendar. Ahhh.....TOM is a week away. Now that that mystery is solved, let's move on to breakfast.

Fage with sugar free strawberry preserves, 1/2 cup Fiber One, and strawberries.

I took the kids to school and then went to cooking class at Great News! I haven't been in like a month! Shame! Today's class was "Meat and Mashed Potatoes".

First up was Smokey Marinated Flank Steak on BLT Smashed Red Potaotes. The BLT was bacon, leeks and tomatoes. Super yummy potatoes!!!!!

Next was Seared Scallops with Bacon and Whole Grain Mustard on Creme Fraiche Mashed Potatoes. The potatoes may be the best mashed potatoes I've ever had....nothing healthy about them....just pure goodness. Now for the scallops....they were ok....but I'm not a scallop person. I find that they taste like "weak shrimp."

That brings us to the Root Beer Glazed Pork Tenderloin with Bourbon Mashed Sweet Potatoes. Do you see the caramelized onions on top? I loved the root beer glaze (and I HATE root beer) and the onions together!

Then came dessert: Apple Pecan Cheesecake with a Cinnamon Graham Cracker Crust. OMG....too die for. I think I will make this for Thanksgiving!!!!!

So now it's dinner time and I'm not hungry (I wonder why!?!). Hubby is working so I don't have to cook anything. Trying to decide if I should just skip dinner altogether. I know if I skip it I'll be lying in bed at 9PM hungry so maybe I'll just have soup. Oh...decisions....decisions!!!

Sodium overload. I will blame it on that.

Breakfast was Trader Joe's Strawberry Yogurt O's with almond milk, strawberries and raspberries. I really like this cereal! I wish there were more of those yogurt clusters though...I seem to only get one per bowl. Does this mean that when I get to the bottom of the box I will get a whole bowl full? One can only wish.

I took the kids to school and went to my regular Monday morning Step and Sculpt class. I felt very tired afterwards but in a good way!!! After putting away laundry and organizing bills, I made lunch. There was one slice of veggie pizza left. It had my name on it. Check out all the red pepper flakes! Love me some spicy food!

Then I made a HUGE salad (mixed greens, spinach, tomatoes, mushrooms, red onion, shredded carrots, cucumber and balsamic vinegar) and put it on top. You wouldn't even know there was pizza under there! It was SO GOOD!!! I like it when the salad greens get a little warm from the pizza.

I picked up my son and we went to McDonalds. He got a chocolate milkshake. I got an iced tea.

I had to resist to take a sip of the milkshake. You see, for's all or nothing. I CANNOT try even one bite of something that I know I like. It will lead to MANY more bites. It's best I do not go there at all.

So, I watched him play and then we went to pick up my daughter. I was snacky when we got home so I had light wheat toast with a Laughing Cow cheese and a Honeycrisp apple. I'm really liking those apples!

We took the kids to a pumpkin patch for awhile and came home and carved our pumpkins. I really don't like that job. I think the inside of pumpkins stink horribly. But I love foods with pumpkin in it.'s done and I'm glad for that.

Hubby and I decided that we had too many leftover in the fridge so we declared it a "leftovers night." I decided to have some more of the chili that I made yesterday.

Sorry for the sideways pic....why does it do that? I put cilantro and chopped white onions on top. Verdict? It's still average....not bad but not the best either. I did put a lot of Cholula on top. That almost always makes everything taste better.

After I make a new recipe, I make notes on it if I liked it or not, what changes I made and if the hubby liked it. While trying to decide what to do with the chili recipe, hubby told me I should throw it away. He thought there wasn't a reason to keep a recipe that I wasn't excited about. He's right......I have BINDERS full of recipes.....why keep average ones? So that was the trash it went and I froze the rest of it for another "I don't know what to make" night.

With two points left I'm thinking skinny cow later......

Not too shabby for less than a week of healthy eating and exercising!!!! It's good to back on track even though I ate too much today.

Sorry to be a repeat meal offender but breakfast was the same as yesterday: Ezekiel toast with Barney Butter and a side of cantaloupe. I also had a couple cups of coffee.

My brother in law, my niece and my mother in law came over for the day. I decided to barbeque chicken kabobs and corn. I also made this chili and cornbread. The chili tasted good but not the best. I'll try it again in a few days....usually chili tastes better after it's had time to come together better. :) After all this cooking, I forgot to take pictures. :( The kids were hungry, the adults were hovering and I just wanted to get it served as quick as possible. Oh well. We all ate outside as it was such a nice day!!!

We took the kids to a nearby park to feed the ducks with some leftover hallah that I had. I may have had a few pieces myself. I love hallah!

We hung around the house watching football and drinking more coffee. We picked up pizza for dinner from Leucadia. I really like their pizza! My first slice of veggie pizza:

And because the first was SO good, I had to have another. And a little spaghetti and zucchini pie that my mother in law made. I shouldn't have had the second piece....I am too full now. :( But I did avoid the chocolate chip cookies that my kids and my mother in law made today! Whoopee!!!

So that is that. I'm about to put the kids to bed and call it a night. Hope you all had a great weekend!!


Up bright and early on a Sunday morning!!! You can thank my little man. He likes to get the day started early! :)

Friday night I did have a peanut butter sandwich after all. It hit the spot: two pieces of light wheat bread with almost two tablespoons of peanut butter.

Yesterday morning I went to spin class before I had breakfast. By the time I was hungry it was too close to spinning time so I decided to wait. I did have a cup of coffee (unpictured) before I left though. Spinning was awesome!!! Our Saturday instructor (Hi Vince!) kicks some serious booty! It's such a perfect way to start my Saturday!

When I got home I was craving some Barney Butter. I put a tablespoon on a slice of Ezekiel toast and had some cantaloupe on the side. I really enjoyed this breakfast!

I took a nice long shower and did some stuff around the house before we gathered the family up and went to a new Mexican restaurant in Encinitas called Garcias. I had the chicken and avocado salad. Somehow cheese was on my salad (it was not listed as an ingredient item on the menu) so I took off as much as possible and I didn't eat the shell. I used their awesome salsa as the dressing. I loved this salad! Tons of avocado, tomato and juicy chicken. We will definitely go back!

When we got home, I stared getting the ingredients prepped for my Indian Butter Chicken. My friend Dina had asked me to make it at her family party she was having that evening. I got dressed and took all my cooking equipment over to her house. She was kind enough to have a special friend waiting for me:

Almond Champagne!!!! Oh, how I've missed you!!!!! I had about 2 1/2 glasses of this beauty.

You may notice that the Indian Butter Chicken is in the same beautiful dish last time I made it at Dina's house....I've been admiring it ever since (my chicken looks perfect in it!) so Dina gave it to me! I am so excited! I love it! Thank you Dina!

YUM! I had a fabulous time! I feel like I kept my eating under control so I'm proud of myself!!!!

Right now I'm enjoying some coffee in my robe and relaxing before the day gets started. I have family coming over later and we are going to barbeque probably but I have no idea what I'm going to make. I need inspiration!!!!

A bonus post! Since you all have been so patient with my irregular postings, I bring you this extra one. :)

We all went to Pei Wei for dinner. The kids LOVE this place. I went with the kid's honey seared shrimp with brown rice and added veggies. It was the perfect serving size and I felt happy and satisfied afterwards.

I have a bunch of points left so I'm thinking something with peanut butter. Good night one and all!
