140.0....yesterday

Up bright and early on a Sunday morning!!! You can thank my little man. He likes to get the day started early! :)


Friday night I did have a peanut butter sandwich after all. It hit the spot: two pieces of light wheat bread with almost two tablespoons of peanut butter.





Yesterday morning I went to spin class before I had breakfast. By the time I was hungry it was too close to spinning time so I decided to wait. I did have a cup of coffee (unpictured) before I left though. Spinning was awesome!!! Our Saturday instructor (Hi Vince!) kicks some serious booty! It's such a perfect way to start my Saturday!


When I got home I was craving some Barney Butter. I put a tablespoon on a slice of Ezekiel toast and had some cantaloupe on the side. I really enjoyed this breakfast!




I took a nice long shower and did some stuff around the house before we gathered the family up and went to a new Mexican restaurant in Encinitas called Garcias. I had the chicken and avocado salad. Somehow cheese was on my salad (it was not listed as an ingredient item on the menu) so I took off as much as possible and I didn't eat the shell. I used their awesome salsa as the dressing. I loved this salad! Tons of avocado, tomato and juicy chicken. We will definitely go back!


When we got home, I stared getting the ingredients prepped for my Indian Butter Chicken. My friend Dina had asked me to make it at her family party she was having that evening. I got dressed and took all my cooking equipment over to her house. She was kind enough to have a special friend waiting for me:




Almond Champagne!!!! Oh, how I've missed you!!!!! I had about 2 1/2 glasses of this beauty.


And then...the cooking began....behold the sauce:

You may notice that the Indian Butter Chicken is in the same beautiful dish last time I made it at Dina's house....I've been admiring it ever since (my chicken looks perfect in it!) so Dina gave it to me! I am so excited! I love it! Thank you Dina!

I wish I could tell you the name of all the dishes but I can't. They're Persian and they are excellent. That's all I know. :) Check out the Basmati rice! It's turned out perfectly on the plate with the crispy rice on top:

It was also Dina's son's birthday so we had birthday cake!! I had a small slice:



YUM! I had a fabulous time! I feel like I kept my eating under control so I'm proud of myself!!!!

Right now I'm enjoying some coffee in my robe and relaxing before the day gets started. I have family coming over later and we are going to barbeque probably but I have no idea what I'm going to make. I need inspiration!!!!
