Hello!!! How's everyone's week going? Breakfast this morning was Fage yogurt with some sugar free strawberry preserves mixed it, Fiber One cereal and berries:



















After taking the kiddos to camp, I made my way over to Great News for a cooking class. You know I'm a happy girl on cooking class days! Today's class was entitled: Finger Lickin' Ribs. Non-meat eaters....please look away. :)

First up was Maui Short Ribs with Mango Sesame Spinach Salad:



















I loved this! The ribs were so juicy and the marinade was delicious! The spinach salad went perfectly with it.

Second was Country-Style Pork Ribs with Peach Chipotle Sauce served with Chipotle Potato Salad with Cilantro, Fresh Corn and Red Onion:



















The ribs were good....I actually liked the sauce (for those of you who don't know me well....I don't like fruit with my "food"...just by itself or in a dessert). But what really stood out was the potato salad.....FABULOUS! I will make this at home for sure!!!

The next plate has two different rib recipes on it: Asian Lime Sauced Baby Back Ribs with Sweet Spice Rub (top one) AND Pork Spareribs with Sweet Cola Sauce and Brown Sugar Rub:



















I wasn't a big fan of the Asian baby backs. The sauce was a little too heavy on the vinegar for me. I did like the spareribs with the cola sauce...they were quite yummy!

Because no cooking class is complete without a dessert...they served us some vanilla ice cream with a caramel coffee sauce.

After class I had some time to spare so I went to mall to look around. I did find a few cute things at Nordies. :) I grabbed an iced tea at Starbucks (I really wanted Sees Candy but I restrained myself...after all....I did eat like 1000 calories in ribs earlier) and went to pick up the kids. Came home, went on great walk with a couple of friends up and down our "fire hill" THREE times. I will be shocked if I don't feel it tomorrow! That hill is steep!!!!

We took the kids to Pei Wei for dinner. They go nuts every time we go there. I kinda like it too. :) I ordered my usual: kid's honey seared shrimp with brown rice and veggies....and a ton of their spicy hot sauce:


















Now it's time to put the kids to bed and hit the hay myself. That hill pooped me out!

Have you heard of the GM Diet? A couple of my friends are currently on it and have lost like 5lbs in 3 days so far. Have you heard of this? Done it? What are your thoughts? I'm always wary of "lose it quick" diets but it's hard not to consider when you see if working for people you know! ;)

  1. Gosh, I must be so out of practice as an RD, I've never heard of the GM diet. Of course, i don't advocate any "quick fix diets" that offer quick weight loss. Balanced eating and exercise for life are the way to go. :-) IMHO)
