137.6 ....and second chances.

My son had a great first day at kindergarten. He loved it!! He was excited when I picked him up because we went straight to my sister in law's hotel which had a water slide. After a few hours at the pool, we all got ready for dinner. Since there were six kids with us, we needed something close by and kid friendly. We decided on Buca di Beppo. I hadn't been in ages and didn't enjoy the food when I went but I'm always willing to give places a second chance.

We shared a Casear salad to start:














It was really good!! For the table we split a Margherita pizza, Penne all Caprese and Spicy Chicken Rigatoni. My plate:














I went for seconds on the pizza and rigatoni. Those were really good! I was impressed this time! Just goes to show that you really need to give things a second chance!!

It was rough getting up early this morning. I'm not used to these early school hours yet! Breakfast was egg whites with zucchini, spinach and onions in a whole wheat tortilla:


After taking my son to school and my daughter to camp, I made my way over to Great News for a cooking class. Today's class was called Cucina Rustica - Casual Italian Fare.

First up was a Chopped Salad with Chicken, Salami, Mozzarella, Provolone, Tomatoes, Garbanzo Beans and Garlic Oregano Vinaigrette:














It was delicious! I especially loved the salami....I LOVE salami!!!

The second recipe was Chicken Saute with Prosciutto, Mushrooms, Fresh Tomatoes and Basil:














The chicken was served with a fresh basil pasta. The sauce on the chicken was so fresh and delicious!

The third recipe was Risotto with Summer Vegetables - Zucchini, Red Peppers, Corn and Rosemary:














I love risotto! This one was no exception! So wonderful with the vegetables!

Next up was Grilled Pork Tenderloin with Garlic and Fennel with Penne tossed with Ricotta Cheese and Sausage:














The pork tenderloin was very juicy and the pasta was really good....so creamy from the ricotta cheese!

Dessert was Biscuit Tortoni with Blueberries (frozen mascarpone cream layered with amaretti cookies and blueberries):














This was very light and refreshing actually. You know I'm more of a chocolate person but I did enjoy this. :)

After class I ran some errands. I decided to buy the new iphone and so far I'm loving it!!

I picked up the kiddos and came home for a bit. Now we are about to leave for my sister in law's hotel....more water slide time!!

Gotta run!!

What kind of desserts do you prefer? The chocolatey kind or the fruity kind?

  1. I prefer the fruit cobblers for fruity. I'm not a huge chocolate person. My favorite thing is cake with lots of buttercream frosting. Gah, now I want some.

  2. Glad your son's first day went well. All of the Italian dishes look divine - specially the dessert! I like fruit ones during the summer and chocolate anytime!!

  5. I wish I preferred the fruity kind - but I always go for the chocolatey kind!!!

    Way too much good food in this post. :) I want to try making a risotto!
