Wow…how is it Thursday already? I’m ready for the weekend for sure!

Last night I didn’t get back from picking up my son from his play date until a little bit later so it was a perfect night for some leftovers from the freezer. I defrosted some leftover Mexican Taco Lasagna. I served it with some refried beans and sautéed onions, peppers and mushrooms:

I added some salsa and Cholula hot sauce to it and it was filling and delicious!

This morning’s breakfast was another egg beater sandwich. I microwaved some egg beaters, salsa and shredded cheddar cheese and put it between a toasted sandwich thin with some strawberries on the side:

I took the kids to school and went to Zumba. I came home to change and then went to a local elementary school that was hosting a holiday boutique. My friend Lisa was selling her fabulous flip flops so I had to check it out. If you want super cute flip flops with matching hair bows/headbands, you gotta check out her site here.

At the holiday boutique they had a “lunch truck” that served Mexican style food with an Asian twist. I went for a super simple chicken teriyaki bowl:

It had some “Maui salsa’ – basically just tomato salsa and some shredded lettuce. I added a ton of hot chili sauce because that’s how I like to roll. It was fabulous!

I ran to Ralph’s grocery store to pick up some things I couldn’t get at Trader Joe’s and then it was time to pick up the kids from school.

Next up: dinner (a new recipe!)
