134.6 yesterday, 135.4 today

Sorry to leave you hanging but I got home way too late last night to post. Let's catch up!

Sunday night I had a snack before bed. Kashi Honey Sunshine cereal and almond milk:

Since we ate so early at Souplantation, I was hungry before I went to bed and I really don't like trying to go to sleep when my stomach is growling.

Yesterday morning's breakfast picture must have been eaten by my camera. It was plain non fat yogurt with Fiber One and my yummy raspberries and blueberries. You've seen it before. :) The kids are on spring break for the next two weeks so no pickups and drop offs for awhile. :)

I went to Lisa's for the Legs & Back video and Ab Ripper video for P90X. That Legs video always makes me sore for a couple of days. Love it! Afterwards, Lisa's friend came over to give us massages!!! Nice treat!!!

After the massage, I got cleaned up, came home and made a quick lunch: hummus wrap with veggies and a big salad:

Then we grabbed the kids and headed to LA. We were going to a Passover dinner with some friends. We first stopped at my parent's house to visit. I had an apple and a babybel cheese:

Then I also had a 100 calorie snack pack of these chocolate mint cookies Lisa gave me to try. Yes, Lisa....they Do taste like thin mints!!!! Holy yum!! I don't remember what they were called....Grasshopper something? My dad came home from work and poured me a glass of wine. :) Then we hopped in the car and went to the Passover dinner. I didn't take any pictures because I felt strange. We were with a couple friends and their families so I didn't want to seem weird. Dinner was really good....it was a buffet and I had a little of everything. I ate too much dessert and gave myself a stomach ache. I've been craving chocolate like nobody's business so I overdid it a bit. Oh well! Life goes on. We didn't get home until 10:30 and had to then put the kids to bed. I was glad when I finally went to sleep!

This morning's breakfast was an Egg Beater omelet with a Laughing Cow cheese wedge, zucchini, spinach, tomatoes and onions. I had some salsa on the side and put Cholula on top:

Then it was off to Great News for a cooking class! I haven't been in a couple of weeks so I was especially excited. Today's class was entitled Easter Brunch.

There were two recipes on the first plate. First was Tarragon Yellow Pepper Egg Scramble on Puffy Potato Pancakes with Chive Creme Fraiche. The second was Roasted Sausage with Grapes and Balsamic:

Wow.....the eggs were perfect and the potato pancake was the best one I'd ever had! They are my hubby's favorite thing ever so I will have to make these soon! I even liked the sausages with the grapes even though I don't like fruit with my food. :)

Next up was Sausage, Roasted Red Pepper and Spinach Torta Rustica:

Heavenly! Perfect brunch casserole type dish.

Next was my personal favorite: Baked Pecan Praline Upside-Down French Toast:

Holy yum.....I felt like it was dancing in my mouth. Ahhhh.........

Last was Tart Cherry Almond Puff Pastry Twist:

This was also amazing. It had marzipan inside and was warm and so comforting. I will definitely make this dish for a brunch or breakfast type item to bring to someone's house!

I ran a couple of errands after class and came home to chill for a bit (let all that food digest!) before it was P90X time. Today's video was Kenpo. We like Kenpo. It makes you feel strong but isn't overly challenging so you don't feel like you're going to die, like in other videos (Plyometrics).
Now I'm just catching up on email/blogs before hubby and I go visit our newest nephew. Have a great evening!
