Hi!!! Last night's dinner was one I had made before: Cheesy Chicken Macaroni & Cheese Casserole. I did make a few changes: I used fresh mushrooms instead of canned, I sauteed them with onions when I cooked the chicken also adding garlic powder. I like how it turned out!

The green beans I served alongside were very good! I did add Cholula to it though. :) Do you think I'm burning my insides eating all this spicy food? :)

After getting the kids to bed, hubby and I went in the jacuzzi. My muscles thanked me! I had some Special K granola with chocolate unsweetened almond milk afterwards for dessert. I love this granola!

It's been a rough couple of night...my daughter has been sick and wakes up a lot coughing. I made a doctor appointment for her today....more on that later.

Coffee was needed first thing this morning. Breakfast was a low fat whole wheat waffle with almond butter and a side of cantaloupe.

I took my son to school and went to Lisa's for P90X. Today's video was Core Synergistics. I really dislike that video. I did look ahead and realized that we never have to do this video again for the rest of our time doing P90X. YES!

I came home and picked up my hubby and my daughter and went to her doctor appointment. Turns out she has pneumonia!!! Poor thing!!! Tons of medications/oxygen treatment later, we went home. I jumped back into the car and went to pick up my son from school. Brought him home and then went to FINALLY eat lunch. I was about ready to eat my hand off! I went to Subway:

My sandwich looks different right? They were out of wheat bread. Ugh. Since I didn't know point/calorie difference for the honey oat bread (the only other wheat looking one) I went with white bread but no before having this conversation with the guy who was working there:

Me: What is the calorie difference of the wheat vs honey oat bread?

Guy: Uh, I don't know. But I do know that the white bread has no calories.

Me: NO calories? Just about everything you put in your mouth has calories.

And so I went with the "no calorie" white bread. :)

Then it was grocery time and I picked up my daughter's plethora of prescriptions. I came home and she was already running around and eating and smiling which she hasn't done for 3 days. :)

Hubby and I have a dinner tonight with some of his work peeps at Firenze (you know this is my favorite Italian restaurant ever!) so I need to get dressed soon for that. Peace out.

  1. Oh that's funny. I've had someone tell me that rum and diet coke has no calories, because you know that commercial that says the drink has no carbs? Umm...sadly, all alcohol has calories! I hope your little one feels better soon!

I am definitely going to try some of your recipes. The mac n cheese looks yummy! We love Trader Joe's too, they have great frozen foods that are so easy to make. Thank you for your blog, you've inspired me to eat healthier! :)

  4. Haha that's funny that he told you the white bread has no calories. Think before you speak, I always say.. and TRY to follow. A nice evening in the hot tub sounds perfect after a long day, so jealous that you have access to one. I hope that your daughter gets to feeling better soon! xoxo

  5. i actually worked at subway last summer and the honey oat bread is the same as the wheat but just sprinkled with some oats[i dont know where they get the honey from lol!] before baking!
