143.2…Buffalo Chicken Dip

How’s your Labor Day weekend treating you? We’ve been pretty chill over here!

Last night we went to our friends’ house for dinner. I enjoyed some vino immediately upon arrival. :)

So that’s my new hair color. It might be hard to tell from the picture but it’s a lot darker. I’m excited to get some highlights put in on Tuesday.

I made a fabulous dip to bring over to their house. If you’ve been reading my blog for awhile, you know I LOVE hot wings. LOVE LOVE LOVE. I found a recipe for a Buffalo Chicken Dip that claimed to taste just like hot wings. Yes!

Verdict: it did taste like hot wings and rocked my face off!

Buffalo Chicken Dip

Original Recipe

Ingredients
  • 2 (10 ounce) cans chunk chicken, drained
  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup Ranch dressing
  • 3/4 cup pepper sauce (such as Frank's Red Hot®)
  • 1 1/2 cups shredded Cheddar cheese
  • 1 bunch celery, cleaned and cut into 4 inch pieces
  • 1 (8 ounce) box chicken-flavored crackers
Directions

Heat chicken and hot sauce in a skillet over medium heat, until heated through. Stir in cream cheese and ranch dressing. Cook, stirring until well blended and warm. Mix in half of the shredded cheese, and transfer the mixture to a slow cooker. Sprinkle the remaining cheese over the top, cover, and cook on Low setting until hot and bubbly. Serve with celery sticks and crackers.

For dinner our friends grilled up some delicious chicken and steak.

There was a mixed green salad with homemade vinaigrette and an orzo salad. I had a bit of everything!

Another one of my friends made an apple pie. The edges got a bit burnt but it still tasted great!

I brought over a random plate of goodies I had lurking in my kitchen: Rice Krispies treats, Brownie Cheesecake bites and mini cupcakes:

I rolled with a small slice of apple pie with vanilla ice cream.

Glad I saved up my calories! What a delicious meal!

This morning I kept things simple with a bowl of Cinnamon Burst Cheerios (that were stale) with almond milk and a side of watermelon.

I totally rocked my to-do list today. I packaged up the stuff I sold in my eBay auctions, put the laundry away and started to set up my new printer. Too bad it won’t turn on. Nice huh?

Lunch was bad ass.

I made some chicken salad using the Trader Joe’s Just Chicken, a bit of light mayo, celery, dried dill, garlic salt and pepper. I toasted some wheat bread, added the chicken salad and some baby spinach. It was amazing. 

The rest of the afternoon was spent organizing all my son’s Kindergarten paperwork/memories. It went from this madness:

  1. I make the same buffalo chicken dip, but instead of using canned chicken. I boil chicken breasts and shred them. It's a fantastic dip, glad you enjoyed it!!

  2. everything looks great! I LOVE the sound of that dip - sounds fabulously addictive. :) I like to bring dips or hummus - they always go over so well!

  4. Because I am the only one who loves buffalo anything, that dip is not safe in my house - I can eat the whole thing in one sitting!

  5. My mom makes that chicken dip! I swear you are always eating the best food, I wish I could eat that ratatouille through the screen!
