142.6…A Day of Remembrance

I cannot believe that it has been ten years since the tragedy on September 11, 2001. I remember that day like it was yesterday. I lived in an apartment in Los Angeles and received a phone call from my mom that morning to turn on the news. As I got ready for work, I watched in horror at the events unfolding. I drove to work to find out that our offices would be closed. I drove to my parent’s house and spent the day with them watching the news.

Today as I remember that day, I am thinking about those that lost loved ones, a country that was forever changed and how proud I am of our nation. September 11th was a tragedy meant to tear us apart. Instead it brought us together. We will never forget.

Last night’s dinner was a mish mash dish. I defrosted some penne with vodka sauce, added a bit more marinara, sautéed zucchini, onions and spinach and baked it with mozzarella and parmesan cheeses on top.

Easy and delicious!

This morning the hubby went to play golf and I chilled with my coffee on the couch. Eventually I got up and made breakfast. Breakfast burrito with egg beaters, onions, green bell peppers, jalapenos, salsa, Cholula hot sauce and shredded cheddar cheese. I had a bowl of watermelon as well.

Then I cleaned up around the house: put away all the laundry, unloaded the dishwasher, tightened all toilet seat lids (don’t laugh-they were loose!), planned a menu & sent out the Evite  for an upcoming brunch I’m hosting (details to come soon) and put away stuff that had been piling up in the garage.

All that work made me hungry for lunch! I whipped up some tuna salad and ate it with celery sticks.

When my husband came home, he took the kids swimming. I watched while enjoying some wine.

We are going out to dinner tonight and I’m looking forward to it. I’ve already looked online at the restaurant’s menu to see what I’m ordering. :)

  3. Your burrito sounds delicious. I may try to put that together later in the week. What kind of tortillas do you use? I love LaTortilla Factory. Their low carb tortillas are delicious, low calorie and hold up well to breakfast burritos.

  5. Your pasta wasn't gummy when it was defrosted? I've never tried to freeze cooked pasta because I thought it would be nasty reheated - yours looks good though!

    My pot pie I made last night was delicious - although my husband won't eat it as a leftover, so I think I am going to scoop out the inside and make a pot pie noodle soup!

    Oh, and I am making reuben patty melts for dinner - can't wait!

    Hi Biz! I freeze pasta a lot and haven't found it to be gummy in the least. I'm careful how I handle it when I reheat it...either in the oven or microwave. Turns out great!
