I was so hungry waiting for my husband to come home last night so I finally texted him to find out when he was coming home. Turns out he had a business dinner he forgot to tell me about. I raced into the kitchen and made some whole wheat spaghetti and topped it with the rest of the pizza sauce from Sunday. I sauteed some mushrooms, spinach, zucchini and onions to go with it:

And as soon as the kids went to bed, so did I. :)

For breakfast this morning I wanted something light since I was going to a Parent Teacher welcome breakfast after dropping my son off at school. I had Kellogg's Fiber Plus Cinnamon Oat Crunch and Fiber One cereals (ahhhhh....as I was typing this I realized why my tummy was a little upset today...too much fiber!) with strawberries and almond milk:

After dropping my son off, I went to the meeting. I had half of a bran muffin (more fiber! oops!) and some watermelon and pineapple. I had green tea as well. I didn't snap a picture...I don't know many of these ladies yet and don't want them to think I'm weird right away! :) Afterwards, I had my first room mom duty: sit with the kindergarten children during an assembly honoring the teachers. All went smoothly. :)

Afterwards I raced to Zumba. I missed the first 20 minutes but made up for it right away...I was quite sweaty afterwards!

Lisa and I decided to hang by the pool and have lunch today. After we changed, we placed our lunch order. Lisa ordered a mixed drink and I'm not one to let someone drink alone so I ordered wine:

Wine by the pool? Yes, please.

I had my standard tuna salad with balsamic vinegar for lunch:

I was really craving chocolate so I bought some peanut M&M's that Lisa said she'd share with me.

She decided that she didn't want any so I ate the whole bag. Can't let a good thing go to waste right? :)

I picked up my son from school and came home to chill for a bit. Hubby's at another work dinner tonight so it was leftover time again! Chili and cole slaw from our weekend barbecue:

Delicious! I love that cole slaw!!

That's it for today! Tomorrow I have to tackle my to-do list. Hubby and I are going to Laguna Beach for a wedding this weekend and I have a bunch of stuff to get done before.

Good night!

What are your favorite traditional barbecue sides? I love cole slaw and macaroni salad. Not healthy at all but YUM!

  1. I love fiber cereal with berries! And you can never let a girl drink, or eat chocolate, alone :)

PS I have always wanted to try Zumba... it sounds like so much fun!
