Ugh....doing a little damage control today. Lots of H2O!!!! I wanted eggs and cheese this morning so I started with these babies:

I was excited when I found these Thomas Bagel Thins in whole wheat! So I heated up some Egg Beaters in the microwave and added a slice of low fat swiss cheese and some sliced turkey. Alongside was some cantaloupe....I felt much better after this breakfast. I didn't think the Bagel Thins tasted too much different than the Sandwich Thins and I didn't think they tasted like bagels but more like regular bread. Maybe I'll have to try them with something else? Peanut butter? :)

I went over to Lisa's for a new P90X video: Back & Biceps. I busted out my new 20 lb weights today.....go me!!! I enjoyed today's video....I really like using weights. Afterwards we did the "Ab Crapper" and it was just that...crap.
Lunch was super exciting. I recently bought a big bag of quinoa at Costco and wanted to put it to use. I found a recipe for quinoa and black beans from allrecipes.com. I followed the recipe almost exactly....the only change I made was using chicken stock instead of vegetable stock. I had a quarter of an avocado and some Cholula. It was OUTSTANDING.

I'm so glad I have leftovers! I bet it would be good in a tortilla too!

The rest of the day was spent doing laundry and organizing some of my recipes I've printed out lately. We decided to take the the kids to Olive Garden for dinner. Seeing that it was Saturday night, we figured we better get there early so we arrived at 5:20pm to see that there was already a 30 minute wait. Huh!?! How early do you have to get there? So we went next door to Marie Callendars. They had a soup/salad bar so that's what I went with. I may have gone a little overboard with the ranch dressing but it was darn good. I live for a good ranch dressing!

It was a good meal! I'm ready to go to bed early and get a good night's sleep tonight!! Good night everyone!

    That quinoa recipe looks awesome.

    I like the thins but agree, they're more like seedless hamburger buns. I like them with cream cheese but they definitely don't sub for english muffins!
