143.8…Fancy Seafood Dishes

I said goodbye to the last of the Buffalo Chicken Chili last night.

Today’s breakfast was easy: Fage yogurt with raspberries and strawberries.

I took the kids to school, ran some errands and then went to Great News for a cooking class. Today’s class was taught by my favorite instructor, Phillis Carey, and was entitled “Fancy Seafood Dishes.”

The first recipe was San Francisco Sourdough Crab Cakes with Warm Tomato Orange Vinaigrette.

Delicious! The crab cake was loaded with lump crab meat and I really enjoyed the sauce on it. It would be great on a piece of fish or chicken. Everything was served on a bed of arugula.

The second recipe was Seared Scallop and Shrimp Saffron Tomato Bisque with Red Pepper Aioli.

This wasn’t my favorite. It had a ton of white wine in it and I could really taste it and felt it threw the dish off. Everyone around me was commenting on how good it was so maybe I was in the minority.

The next recipe was Florentine Fish Fillets on Lemony Spinach topped with Mustard Soufflé.

The fish that was used was black cod. It was delicious. Very light!

The next recipe was  Broiled Cajun-Rubbed Salmon Fillets with Key Lime Beurre Blanc.

Yum! Love the citrusy butter sauce on this!

Lastly was dessert: Lemon Cheesecake with an Almond Crumb Crust.

Fabulous cheesecake!! Loved the lemon flavor!

After class, I ran to Costco for some Thanksgiving supplies and picked up the kids from school.

Not much on the agenda for the rest of the evening fortunately. I see an early bedtime in my future!

Are you a seafood fan? Do you have a favorite fish? I love seafood but my husband doesn’t so I rarely prepare it at home.
