139.4…..Feeling Brand New

I got stuck going to Pei Wei last night for dinner. I’m getting a little tired of it. I was supposed to be at Donovan’s for Ladies Night but since that got cancelled, I had to go where the family wanted to go.

I did not want my usual, so I decided to split a couple of things with the hubby. Kung Pao Beef (with brown rice for me):

I liked the sesame chicken but the kung pao beef was WAY too salty. Ick.

This morning I got dressed and picked up Dina because we were getting our hair done today. Yes!! I always feel like a brand new woman after my hair gets cut and colored.

We decided to leave a little early so we could have breakfast. Our salon is in San Clemente which is about a 45 minute drive. We went to Antoinne’s Cafe for breakfast. I had a hazelnut coffee (yum!) and a fabulous breakfast burrito:

It was the veggie burrito and had eggs, cheese and tons of veggies in a spinach tortilla. And the hash weren’t bad either. :)

We spent the next few hours getting beautified and then made our way back home. We stopped at Trader Joe’s to grab a few things. I was planning on doing the last bit of leftovers for awhile but I decided to not torture my husband again and make something else….pizza!

Tomorrow morning we leave for Napa for a friend’s wedding. Must pack!

139.2….Leftover Leftovers

You all know that I love having leftovers in my freezer that I can pull out when I don’t feel like cooking a full meal or am short on time.

Last night’s dinner was just that…leftovers from the freezer. Except this was penne pasta with meat sauce that I had frozen and then turned into leftovers by baking it with cheese on top. Then the rest of THAT went into the freezer.

I guess there’s a point when you need to stop re-using leftovers. I learned that last night. My poor husband suffered through a bland, tasteless pile of stuff. At least the veggies were good!

I got up bright and early this morning to get ready because my mom and mother in law we coming for grandparent’s day at my son’s school.

I knew last night what I wanted for breakfast…..egg sandwich! I can’t get enough of it. I mixed some salsa in my egg beaters and microwaved it. Some cheese and a toasted English muffin finished it off!

I took my son to school, dropped off my mom and mother in law and then took my daughter to school. I went to Zumba and then quickly changed. I picked up the grandmas (who had a fabulous time!) and we came home to meet my hubby for lunch at our club.

It was melty cheese, artichokes, roasted red pepper and queso fresco. I’m not going to lie….it was quite yummy!

Very satisfying!!!

Then it was time to pick up the kids. I thought I was going to be getting ready for Ladies Night tonight but I had to cancel it because of low attendance. :( We were going to go to Donovan’s Steakhouse. I guess I don’t need all the calories right?

So….now we are trying to figure out where to take the kids for dinner. Stay tuned. :)

141.0 Ouch

I think my “vacation mode” eating is not helping with weight loss. Too bad I have another trip scheduled this weekend….a wedding in Napa. I guess there’s going to have to be some serious detox time next week!

Breakfast this morning was Fage yogurt with Fiber One cereal, strawberries and blackberries:

After I took the kids to school, I went over to Great News for a cooking class. Today’s class was entitled: Fast Fish Entrees.

The first recipe was Broiled Halibut with Lemon Aioli and Caper Topping:

Yum! The topping reminded me a little of tartar sauce….I would have liked more on the fish!

The second recipe was Oven-Braised Bass in Artichoke and Tomato Broth:

Also delicious! I loved the sauce…it would be great on pasta!

The third recipe was Salmon with Creamy White Wine Leek Sauce with Orange Zest:

This one was my favorite. The sauce was so dreamy!

Next up was Sautéed Fish with Fresh Ginger and Cilantro Marinade and Asian Lemon Sauce:

The sauce was very lemony and unique. I would enjoy it on chicken as well. Since hubby doesn’t eat fish (!!), it’s nice to learn sauces and techniques that can be adapted for other types of meat.

Yes, it’s as good as it sounds!! I will make this for sure!

I picked up my daughter from school and got a much needed car wash. Tomorrow is grandparent’s day at my son’s school and I don’t need the grannies driving around with me dirty style!

We picked up my son and came home. I’ve been spending the last hour or so figuring out how to put kid’s games on my old iphone so my son can play with it. I’ve had to update this and update that and I’m about to go nuts. The things you do for your kids. :)

139.6…Hot Wing Intervention

Ahhh…..Mondays. A day to start fresh, get things done and to remember to eat healthy….or so I thought.

Breakfast was an egg beater sandwich on a sandwich thin with swiss cheese, spinach and a side of strawberries:

I dropped the kids off at school and continued on my quest for health at the gym. I went to both Cardio Muscle and Zumba classes. I didn’t think I was going to make it through Zumba but I powered through and was glad I stuck through it. I had a few minutes to clean up and grab a snack before I picked up my daughter from school. Another opportunity for health:

For lunch, I thought Subway would be a good, quick option for I had a million errands to run and not a lot of time to do it:

I picked up my son from school and came home to finish unpacking, putting things away and other random “after vacation” cleanup.

Our friends invited us and the kids to come over to go swimming. When my friend asked me if I’d like a glass of wine, I didn’t think to say no.

A refreshing glass of white wine on a 100+ degree afternoon….why would you say no?

After swimming, we all went over to our club to watch some Monday Night Football.

Until next time Las Vegas!

Home sweet home! There’s nothing like being at home! There’s also nothing like a fabulous weekend in Las Vegas! Until next time….

Yesterday I slept in a bit and finally got up and got ready to go to the pool. We had a cabana and it was really nice! I started the day classy style….with champagne!

And with some chips, salsa and guac! It was about 11am at that point so I skipped breakfast altogether.

I never really left the cabana. We watched football all day except that the cabana TV’s did not get the USC game. Ugh!!

For the second part of my lunch, I split the turkey panini with Alexis:

I enjoyed it so much the day before that I had to go back for a repeat!

The Encore pool area had outside gambling so we played a little blackjack before it was time to get dressed.

All ready to go! My husband and our friend Jason had the opportunity to play in a poker tournament at the Wynn pool. They had quite the spread! Along with an open bar, they had tons of delicious food. The name of the event was Pokerfest….a take off from Oktoberfest.

I went back for seconds! Originally we had plans to go out to dinner with Jason and Alexis and another couple of friends who live in Vegas. We didn’t realize how well the hubby would do in the tournament! Out of 150 people, he was 14! Nice going. No he didn’t win anything…..he had to be 9 or under to win. Next time! :)

Instead of dinner we went dancing at the XS nightclub at the Encore. What a blast!

After a ton of dancing and couple of tequila shots later, we were HUNGRY! We went to the Society Cafe at the Encore for some late night grub. After I ate, I realized I did not photograph my food! Oops….I’ll blame it on the tequila. :) We all basically split a bunch of good greasy stuff: veggie pizza, hot wings, mini hot dogs….I think that was it. :)

This morning my husband brought me breakfast in bed:

Latte and a yogurt parfait! Score! We laid around for a bit and then got dressed and all packed up for the airport.

We stopped at some restaurant in the airport for lunch. I ordered this Baja type salad:

And it tasted disgusting. I had to send it back. The dressing was really odd. Since we were running out of time, I ordered the chips and guac instead:

We made it home safely. It was still super hot out so the hubby took the kids in the pool. What a beautiful evening! Hubby had to work tonight so I did the easiest thing I could for dinner. I saw some leftover spaghetti in the fridge so that is what I had:

With some marinara sauce and grated romano cheese, it hit the spot! The kids are in bed, I’m going to finish unpacking and go to bed myself! Glad to be home!

I really LOVE Las Vegas.

Las Vegas always makes me happy. You can do anything you want here, the food and wines are incredible and the people watching is outstanding. I’m really enjoying my trip so far. Let’s rewind….

Thursday night we got ready to go out with a friend of my husband and his wife.

Hubby’s friend chose the Sage restaurant in the Aria Hotel. The restaurant is described as modern American cuisine spiced with global influences in a sophisticated, yet comfortable atmosphere.

I started with a glass of Chardonnay:

For my first course, I ordered the Seared Black and Blue Tuna (Baby Artichoke, Quail Egg, White Anchovy):

It was pretty delicious. It reminded me of a nicoise salad. For my entree I had the skirt steak:

It had fried onions on top and a avocado puree underneath. I loved this dish. The steak was cooked perfectly and the avocado was a nice addition!  What a great dinner to start our trip!

We went back to our hotel to wait for our friends who were arriving shortly. Hubby and I gambled for a bit. Once our friends arrived, we gambled for a long time and realized eventually that we were hungry. We went to the Wynn hotel to eat at Strata. Hubby and I split hot wings and a Caesar salad:

Friday morning, I woke up leisurely and grabbed an iced latte and a yogurt parfait and met our friends at the pool:

What is better than laying by the pool, in perfect weather with a magazine and a mimosa? I’m not sure. Eventually we gathered a ton of beverages:

A ridiculously fabulous turkey panini on ciabatta bread with avocado, bacon, tomatoes and a delicious aioli of some sort. The fries were out of control good. YUM! We stayed at the pool all day until it was time to get ready for dinner.

We went to Botero in the Encore hotel:

Botero has a beautiful outdoor dinning area over looking the pool and has a really cool lounge feeling. 

We did indeed sit outside and it was a beautiful Las Vegas summer evening. We all split a bottle of wine which I failed to photograph. My appetizer was the Hamachi Tartare which was seared with a crispy rice cake and sweet chili vinaigrette:

This was a little too sweet for me. The rice cake was sweet and a little too greasy. My entree, however, was excellent!

Brioche Crusted Colorado Rack of Lamb = amazing. My friend Alexis ordered the truffle macaroni and cheese which was out of this world.

The dessert menu was really outstanding. We split three things:

I’m not a fan of bananas so I only had one bite. The bread pudding was great but too banana-y for me. :)

Loved this!!! It had a crunchy wafer type center that went well with the ice cream and chocolate.

I was most excited about these:

Botero Ice Cream Cupcakes.

They weren’t that good. :( I tried a bite of each flavor: Lemon, Chocolate, Funfetti (!!), Red Velvet and Carrot Cake. The Red Velvet was the best one but I found the cake parts dry and the sliver of ice cream in between the cake and frosting a little weird. Oh well.

We all gambled for a bit and then it was off to see Le Reve. I had seen it before but was excited to see it again. It’s an amazing show.

After the show, it was more gambling. Late night we went to Red 8 for some Chinese food. Hubby and I split chicken chow mein and kung pao chicken:

Then it was bed time!

Here I am on a Saturday morning, lying in bed blogging. Eventually I need to get up and get ready for the pool. We got a cabana today and hopefully will watch the USC football game in there. Go Trojans!
