Last night I found a recipe I've had since 2003 for Turkey Taco Bake. It's a Weight Watcher recipe and I had all the ingredients on hand so I thought I'd give it a shot. It turned out pretty decent but tasted fabulous with Cholula on it! I added black beans and sauteed fajita style veggies to it:

Here's the recipe:
Turkey Taco Bake (6 servings - 6 points each)
1 pound ground turkey
1 can tomato soup
1 cup salsa
1/2 cup skim milk
6 flour tortillas - cut into 1" pieces
1 cup reduced fat cheddar cheese
Preheat oven to 400 degrees. In skillet, over medium high heat, cook turkey until browned, stirring to separate meat. Pour off fat. Add soup, salsa, milk and tortillas and half the cheese. Spoon into 2 qt. shallow baking dish. Cover and bake for 30 minutes or until hot. Sprinkle with remaining cheese and pop back into oven until cheese is melted.
Breakfast this morning was an egg white sandwich on a bagel thin with light cheese and some cantaloupe:

My spin class was cancelled this morning so Lisa and I went for a 4 mile walk. Then it was off to Costco to replenish some stuff. I came home and whipped up one of my "leftover" salads. Lisa calls these "garbage can" salads. :)



This one had leftover chicken and black beans. I added to it some mixed greens, spinach, red bell peppers, tomatoes, broccoli, shredded carrots, cucumber, hummus and drizzled it with balsamic vinegar.
I'm waiting for the hubby to get home so we can do our push ups. (Day 1 of Week 3). There is an app for it on the iphone! Very exciting! :) Then I need to get ready for Bunco tonight and make my appetizer. Stay tuned!
What is your favorite bottled salad dressing? I'm not a big fan of bottled dressings but I really love Girard's Light Champagne dressing. :)

    I'm really liking Annie's dressing these days, currently we're eating her buttermilk one, very good!

  2. My favorite salad dressing is Galeos Wasabi Miso. It is absolutely crack for me. I can only find it at Whole Foods and I go through at least a bottle per week.

  4. Turkey is such a good taco meat sometimes! I always forget that. I love garbage can salads, they're the best! :) I really like Annie's Goddess dressing, although you have to get used to the taste. I want to find a peanut-ginger-soy dressing since those are some of my favorite flavors!
