138.8...yesterday

Whew.....yesterday was a whirlwind of cooking!!!! The day started out with breakfast: egg beaters and a Laughing Cow cheese wedge on light wheat toast. Alongside were strawberries and coffee....to get the day started right. :)

I took the kids to school and came home and started cooking. I had originally placed on going running but I was starting stress that I wouldn't have enough time so I just made a deal with myself that I'd workout on Sunday (my normal day off) instead.

So, the cooking began....check out the homemade croutons:

Mmmmm....onions and garlic:

During all this culinary madness, I got hungry. I need something fast so I opted for a microwave meal.

I put the rest of the snap peas on top.

It was ok. Not the best....not the worst. It got the job done. Check out the craziness that was my refrigerator:

So....what was I making all day for my Bunco group?

Cheese plate: Triple Creme Brie, Gouda with Walnuts and Vermont Cheddar.

Olives, Marcona Almonds and Gorgonzola crackers.

Chocolate Cinnamon Cake:

More appetizers:

These little empanadas were my favorite:

These little mushroom guys were good too!

SANGRIA!!!!!

And for the main event: PAELLA!

In my favorite serving bowl (thank you Dina):

And Mediterranean Caesar Salad with Sun-Dried tomatoes and olives:

I had such a great time hanging out with the girls and eating and drinking Sangria!!!!
