Monday morning huh? Back to reality.......

Light wheat english muffin with Barney Butter and cantaloupe. Boring....I know...but so satisfying!


Took the kids to school and went to Step and Sculpt class. It's such a good way to start my Mondays.....some cardio and a lot of weights! I came home and quickly changed clothes and ran over to Costco to pick up some more stuff for my dinner tomorrow. On the way I had a delicious Honeycrisp apple. These apples really are the best!



I, again, managed to avoid Costco samples by chewing a piece of gum while I was there. When I got back I was hungry for lunch so I decided the thing that needed to be done was clean out the fridge as best as possible. So....tuna casserole again. There's only a little left.



After lunch I went over to my friend Lisa's house to finalize my holiday card photo and order them. They are going to be awesome!!! I ran over to Trader Joe's to get the last of the necessary groceries.

I was feeling snacky when I got back so I had some Trader Joe's Strawberry Yogurt O's cereal and almond milk.



Then the cooking/prep began. I'm not going to say what I'm making because I know that many of the lovely ladies coming tomorrow night read this.....I want there to be some sort of surprise you know. :)

Dinner was another "clean out the fridge" meal: Sun-Dried Tomato Chicken with butter noodles and sugar snap peas from last night's meal. That's the last of the chicken from that recipe. It still tasted good even though it was like a week old. Yeah....I'll eat things that are a week old. After that, I'll probably through it away. How long will you leave leftovers in the fridge before throwing them out?



Just finished putting the kids to bed....I think I'll indulge in a Skinny Cow ice cream and call it a night!

  1. I only leave leftovers 3-4 days max, but I work in foodsafety and am a bit paranoid about getting sick from food!
