The weekend is here!!!

I couldn't think of an interesting breakfast this morning but I felt like cereal. I went with Trader Joe's Morning Lite Cereal with their dried cranberries and jumbo raisins with unsweetened vanilla almond milk. It was very good! I love Trader Joe's jumbo raisins....so plump and juicy! :)


After dropping the kids off at school, I stopped by Starbucks for my usual: double tall skinny vanilla latte. Latte goodness.


Off to cooking class at Great News! Today's class was on boneless skinless chicken breasts (hubby's favorite). The instructor, Phillis Carey, is the master of chicken breasts. The secret is to pound your chicken so it's even thickness...that way it cooks faster and is juicier. It really works!

The first recipe was Chicken in White Wine with Red Grapes and Tarragon. The pic was too blurry to post...sorry. Back to yesterday's topic of things I don't like: fruit with food. I don't know why but I feel like fruit is nice by itself, with some desserts and on some sweeter breakfast foods but that's about it. I really don't like it with savory things. The grapes were ok with this but not my favorite. The sauce was really good though.

Next was Lemon Marinated and Rosemary-Fennel Rubbed Chicken Breasts with Lemon Aioli. The chicken was marinated (obviously) and grilled. It was pretty good especially with the aioli. It looks like a blob of mayo in the picture but it was lemon garlicy goodness.



The next recipe was Baked Artichoke and Feta Stuffed Chicken Rolls in Oregano Marinara Sauce. This was really good!! I love stuffed chicken!!! On the plate with it was the third recipe: Chicken Rellenos with Cilantro Pesto and Goat Cheese Filling. They served this one with a warmed black bean and corn salsa. This chicken was stuffed with pesto and goat cheese and dredged in flour and then dipped in a mixture of egg and Parmesan cheese. It was then browned on the stove and finished off in the oven. Really yummy!



The last recipe, Italian Chicken Cordon Bleu with Parmesan Mornay Sauce, Peas and Prosciutto was my favorite. I guess the title says it all. :)


After class, I ran some errands including a quick stop at Nordstrom's to return something, buy a gift and possibly a couple of shirts for myself. :)

When I got home I started to get things ready for our weekend in LA, do all the laundry, bake a little something special for my brother (hope you're not reading this!), and make dinner. Since we are going to be gone all weekend, I wanted to use up some of the stuff in the fridge. Hubby had a couple of pieces of leftover pizza in there so I had that with a salad.
I think I broiled the pizza one minute too long. It was crispy. :) I also had this:
That was all that was left in the bottle....need to use it up right!?!
I did not get a chance to exercise today. :( And it won't be happening this weekend at all. Sometimes life happens but I know that I will get it back into gear as soon as possible. Hubby is out of town tonight and the kids are asleep. Ahhhh....peace and quiet!
