141.8…I’m finally full!

I’m finally making a dent in my freezer. I pulled out something labeled “Mexican Chicken & Rice” for dinner last night. I probably should start putting where the recipe came from on the label as well. Note to self.

I ate the chicken and rice with refried beans, salsa and some fresh chopped cilantro to brighten the flavor.

I had a bit of a sweet tooth after dinner so I had some “fun size” candies:

Who thought that this tiny little candies should be called “fun size”? These are not fun. I think the bigger, movie theatre size candy is much more fun.

For breakfast this morning, I had a new product to try. Kraft kindly send me a coupon for their Athenos Greek Style yogurt. I choose the kind with strawberry:

I mixed the yogurt and strawberry stuff in a bowl and topped it with All Bran Bran Bud cereal and fresh strawberries:

I thought it was pretty good. Nothing too special. I still like Fage yogurt better. Fage is thicker and has more protein.

On the way to my kids’ schools, there was the brightest rainbow I had ever seen.

The picture does not even do it justice. If you look closely to the left of the bright rainbow, there is another rainbow! A double rainbow! Reminds me of one of my favorite YouTube video:

Like most meals lately, my breakfast did not hold me over very well. I stopped at Starbucks for a green tea. I brought grapes to snack on but that just didn’t seem like enough. The Kind bars caught my eye. I’ve never had them before so I thought I’d give the Apple Cinnamon Nut bar a try.

Wow…that bar was good!!! I hung out for a bit until it was time to head over to Great News for a cooking class. Today’s class was entitled Spring Entrees.

The first recipe was Springtime Salmon, Asparagus and Roasted Potato Salad with Fresh Herb and Caper Dressing:

The dressing was so good!! What a filling salad!

The second recipe was Shrimp Sauté with Tomatoes and Prosciutto on Creamy Garlic Polenta:

Excellent. I love the comfort factor of the polenta and the great taste of the tomato sauce with the shrimp.

The next recipe was Pork Tenderloin with Ancho Chili Rub and Maple Balsamic Glaze:

The sauce on this was unique….a little spicy and a little sweet. Good but not my favorite.

Next up was Chicken Saltimbocca with Lemon Basil Beurre Blanc:

Loved this one. You can’t go wrong with chicken stuffed with cheese swimming in a butter sauce. :)

The last recipe was Filet Mignon with Gorgonzola Sauce, Fresh Tomatoes and Basil:

Mmmmm…..great sauce! I’m not the biggest blue cheese fan so I could have done without the gorgonzola crumbles on top. The instructor, Phillis Carey, said the sauce would be equally delicious with Boursin cheese. Now we’re talking! I may have to give that a try!

For once in a long while, I was full. Stuffed actually.

I picked up the kids from school and took them to their “Dog Smart” class. The amount of improvement between last week’s class and this week was like day and night. The program is really working. My son announced during class, “I like dogs now!” Yes!

  2. Duuuuuuude, that video is freakin hilarious! That guy couldn't have been for reals. I would be amazed at seeing a double rainbow with my own two eyes as well, but I can't see going on like that and crying on camera and then posting it on Youtube. The funny thing is that because of the name of the video, I kept expecting a bear to jump out of nowhere and him to run screaming or something. I was kinda disappointed it didn't end with his head getting torn off. LOL-just kidding! ;) The one you captured is just gorgeous. God's artwork is so amazing! I'm curious about the "Dog Smart" class. Why were they scared of dogs and are they going to the class b/c you guys want to get one?

  4. I'm with you...there's nothing fun about "fun sized" candy bars. I do love those york mints, and I also love Reese's too.

    i have seen a double rainbow...and it was awesome. tho my reaction was not quite as amazing as the guy in the youtube video! haha

  8. hmm, what fun size candy bar don't I like?! ha but I would say my fave is something with caramel...like a milky way or rolos are my absolute fave candy. Can't just eat a couple of those though!
