Here is my post from last night. Blogger.com was giving me troubles so I couldn't get it to post. :(
So last night I did end up trying the new Special K granola with some almond milk:

Verdict: it was really good!!! Perfectly crunchy with the right amount of sweetness. I highly recommend trying it. For 3/4 cup it is 190 calories with 3 grams of fat. I ate it in bed. :)

Breakfast this morning was Fage yogurt with sugar free strawberry preserves swirled in, topped with Fiber One cereal and strawberries.

I took the kids to school and then went over to Great News! for a cooking class. I haven't been in a month so I was long overdue and VERY excited!! Today's class was Soups from a Slow Cooker. I actually forgot to take pictures of the first two soups because I was so excited. The first soup was Chicken Tortilla Soup with Avocado and Corn Salsa Garnish. It was excellent. Everything that chicken tortilla soup is supposed to be and the avocado corn topping was off the hook! The second soup was Mixed Shellfish Chowder. It was amazing....it had lobster, crab and scallops in it. How could that be bad? :)

The third soup was Back Bay Corn Chowder. Also excellent:

The last soup was entitled Sopranos Sausage Minestrone. It had tons of veggies in it including escarole!

For dessert, they made a Bread Pudding with Whiskey Sauce in the slow cooker. It was beyond amazing:

After class, I picked up my son from school, took him home and got changed for day 6 of P90X. Today's video was Kenpo X. It was a mix of kicks and boxing moves. It was a fun video!! Tomorrow is our first rest day....I need it! I'm proud that we finished our first week of P90X!

For dinner I made my favorite stuffed shells. Before cooking:

These guys are 5 points for 4 of them and they are filling! I searched online and found the recipe so I wouldn't have to type it up. :)

  1. I am so impressed with you for doing P90X. I got the program as a Hanukkah gift but I'm scared to actually do it! So I'm doing the program in the New Rules of Lifting for Woman instead...much less intense :-)
