Feeling more like myself again!

I met up with a couple friends this morning at the gym for some breakfast and weights (not at the same time). :) I started off with an egg white omelet filled with veggies with a ton of Tabasco. I had a piece of dry wheat toast and some fruit to go along with it. Such a yummy, filling breakfast! I wish someone would cook me egg white omeletes every day!

Next was onto the gym. I did upper body exercises for about 30 minutes before moving onto spin class. Spin was glorious as usual. We finished off the spinning with some lower body and abs. Fantastic! :)

I did some stuff around the house before moving onto lunch. I could not decide what I wanted and didn't feel like making a big production out of it. So I made a Lean Cuisine Mac N Cheese (I actually really like their version but I would like it even better if it were made with wheat pasta of course!). On top of that was a cup of steamed broccoli and my very favorite hot sauce: Cholula. All hail the Cholula gods! What is your favorite hot sauce??

I took my son to get a hair cut and noticed there was a new self serve frozen yogurt place in the same shopping center. Well, I had to give it a try!! I cannot remember the name of the place (silly me) but it started with a "F". This was my first experience at a self serve fro yo place. I did look at the nutritional information and it seems about average. They give you these HUGE cups so it's really hard to tell how much you're putting in which I don't like. I tried my best a 3/4 cup and had the Heath Bar flavor. VERY GOOD. I just might have to go back (with my own measuring cup.....just kidding.....maybe). :)

For dinner I had some of those Elie Krieger chicken meatballs left so I decided to whip up my favorite marinara. Making your own marinara is so easy and you can control what you put in it. Why buy the jarred? So, I did promise that I'd give you the recipe.....here it goes:


  • 2 Tbsp Extra Virgin Olive Oil

  • 1 medium onion, diced

  • 3/4 cloves of garlic, minced

  • 1 tsp Oregano

  • 1/2 tsp dried thyme

  • 1/2 tsp dried basil

  • 1/4 cup Parmesan cheese (please use the real thing!)

  • 1 bay leaf

  • One 28oz can of tomato sauce

  • One 15oz can of diced tomatoes

  • 3 Tbsp tomato paste

  • Dash of salt

  • 1 tsp sugar

Heat two tbsp of oil over medium heat. Add the onions and cook until translucent. Add minced garlic for about a minute being careful not to brown. Add the tomato sauce, diced tomatoes, tomato paste, bay leaf, oregano, thyme, salt, sugar and Parmesan cheese. Bring to a boil. Once sauce is boiling, bring to a simmer and cook for 20 minutes on low. Remove bay leaf. I usually just eye ball the herbs. Go ahead and add red pepper flakes if you like it spicy. I leave them out because of my kids and then just add them on top of my pasta. Enjoy!!


So that was the sauce on top of whole wheat spaghetti and two of the chicken meatballs. I also sauteed a bunch of veggies and threw them on top with some red pepper flakes. So filling and delicious!

  1. Where do you do Spin? I've never done it! They don't offer it at my gym and I'm dying to try!

  2. I actually am lucking enough to live where there's a country club that offers exercise classes. I have to drive about a quarter of a mile and voila! There I am. No excuses right? :)
    Spinning is such a great workout!! The first time your butt really hurts from sitting on the seat for so long but you get over that fast.
