On Saturday night I brought these fabulous little appetizers to our Neighborhood Party: Bacon Wrapped Dates Stuffed with Parmigiano.

This recipe comes from a recent cooking class at Great News.

As I mentioned I forgot to photograph them after I plated them. Bad Blogger! But I’m sure you can use your imagination. I have faith in you.

Get all your ingredients out. All three of them. :)

Cook the bacon until it has rendered some fat and begins to turn translucent.

Remove from pan and drain on paper towels.

Remove the pits from the dates and stuff each with a piece of Parmigiano cheese.

Cut the bacon in half and wrap around the cheese stuffed date.

Bake for 10 to 12 minutes until bacon is crisp.

Then forget to take a picture. They did not look cute but they tasted amazing. A couple of people at the party claimed they didn’t like dates but I made them try these anyway. I got the thumbs up. I mean, how could you not like these?? Unless you don’t eat bacon like my husband….poor guy.

Bacon Wrapped Dates Stuffed With Parmigiano (serves 6)

12 strips bacon, cut in half crosswise

24 pitted dates

1/4 pound Parmigiano-Reggiano cheese cut into small chunks

1. Cook the bacon in a large skillet over medium heat until it has rendered some fat and begins to turn translucent; don’t let the bacon brown, or it will be difficult to wrap around the dates. Remove from the pan and drain thoroughly on paper towels.

2. Make a slit in each date and stuff with a small piece of cheese. Wrap the date in a piece of bacon and secure with a toothpick if needed. Place the wrapped dates on a rack in a baking dish.

3. Do-Ahead: At this point, you can cover and refrigerate for up to 36 hours or freeze for up to 2 months.

4. Preheat the oven to 375 degrees and bake the dates until the bacon is crisp, 10 to 12 minutes. Remove from the oven, drain the dates on paper towels, and set on a platter for serving.

Liquid salad dressing crack. I bought this at Costco and am obsessed. I.Need.More.

Breakfast was an egg sandwich made with egg beaters, light provolone cheese and turkey slices. I had a bowl of cantaloupe too.

I ended up dipping each bite of the sandwich in ketchup. A healthier version of McDonald’s Egg McMuffin.

Took the kids to school and grabbed a green tea at Starbucks. I went to cooking class at Great News afterwards. It has been awhile since I’ve been to class! Today’s class was entitled “The Perfect Brunch.” Oh boy….was it ever perfect.

The first recipe was Eggs Benedict Crepes Stuffed with Creamy Scrambled Eggs, Ham and Green Onions topped with Hollandaise Sauce:

Holy yum! Love love love! I love Hollandaise sauce! I want to swim in it!

The next two recipes were Upside-Down Caramel Apple Muffins and Twisted Bacon Spirals:

The muffin was great but can we please talk about the bacon??? The bacon was rolled in cinnamon and sugar and then twisted and baked. I died. OMG. There are no words to explain the goodness of this bacon. I’m not sure I should ever make this….it would be way to easy to eat the entire recipe myself. Oh my.

The next recipe was Savory Vegetable Bread Pudding with Roasted Chilies, Mushrooms, Peppers and Parmesan:

Loved this. I loved all the veggies and bread pudding of any kind is always a winner. Winning!

Last up was Bananas Foster Croissant French Toast with Maple Rum Pecan Sauce:

This will blow your mind. There is so much goodness on this plate (except for the bananas which I pushed aside) that you mind cannot comprehend what is happening in your mouth. You just know that it is beyond anything you have experienced before.

I dragged my body out of it’s magical state so I could walk out of class and drive to pick up my kids from school.

Hubby isn’t home for dinner again….can I just eat more of that bacon please?

Have you ever flambéed before? The sauce for the French toast above was flambéed. Playing with fire is fun. :)

  2. The savory bread pudding looks goooood!!! The dates actually do too but bacon is off the menu for this girl. It makes me a little sad... awesome simple recipes like that make me think i'm entitled to some bacon =) haha

  5. I'd love to hear more about your weight watchers journey - foods you found you liked, meals, etc. Are you at your goal weight? I am kind of mentally working towards WW right now, just to lose 7lbs or so - but so hate doing it - boring! I much prefer the way you eat - I think thats what got me where I am today, however! I do exercise but clearly not enough to offset the yummy food, and wine....love reading of your meals and fun!

  6. Hi Andrea!! Thanks for reading the blog!! I think my weight loss journey would make a great future blog post! My goal weight is 135. I did get to my goal weight but have put on about 5lbs since the holidays. Eventually it will come off I hope! :) Good luck with your weight loss journey!

  7. That eggs benedict crepe looks and sounds amazing. I could eat a gallon of hollandaise sauce!! I think I may have to give this a try ASAP. Oh, and for the best salad ever, if you happen to find yourself up in Calabasas, is at this little health food store called Health Nut. Ask for the Deluxe with Tuna and house dressing. Their house dressing is crack, also. The owner makes it from scratch and sells it. I am tempted to have some shipped out here to ATL. :-)
