141.4…She’s an Easy Runner

I didn’t take a ton of pictures at last night’s Bunco. I just relaxed with some wine (which somehow escaped the camera), good eats and great friends. I dominated the cheese and salami platter:

For dinner, we had Mexican lasagna, garlic bread and a mixed green salad:

The Mexican lasagna was delicious. The hostess, Edilma, is an amazing cook!

I LOVED dessert:

Tiramisu. I had two pieces. With a gold spoon. I am fancy.

We did accuse Edilma of serving “expired napkins.” :)

Breakfast this morning was Barney Butter (almond butter) on a toasted English muffin with a side of strawberries:

I took the kids to school and went to Starbucks for a green tea and to get some work done before my cooking class at Great News started. Today’s class was a winner (WINNING!!). The class was entitled: Do-Ahead Party Favorites. Diane Phillips was the instructor and she’s the master of do-ahead meals. I love me my do-aheads! :)

The first plate had two recipes: Caramelized Onion and Gruyere Dip and Balsamic Glazed Chicken Wings:

The onion dip was ridiculously amazing. It tasted like French Onion soup in dip form. I am planning on making this for an upcoming party I’m hosting. The wings were delicious!! You know how I love wings. :) The glaze was addictive!

Next up was Gyros Meat Loaf with Tzatziki Sauce:

I loved the idea of this. The sauce was refreshing and a perfect compliment to the “sandwich.” I felt that the meatloaf was a little dry for me. I firmly believe that I make the best meatloaf ever so others always disappoint. I guess this meatloaf never really had a chance. :)

Three recipes were on the next plate:

The top was Baked Stuffed Artichoke Bread. This was face rocking. You hollow out a French bread roll and fill it with all this delicious cheesy artichoke filling and bake it. OMG.

The recipe on the right was 10-minute Baked Halibut with Garlic Butter Crumbs. It was flaky and simple yet wonderful!

The recipe on the right was Pizza Pie Potatoes: thinly sliced potatoes flavored with tomato, oregano and cheese, and baked. It was like a lasagna but there were potatoes instead of noodles. Delish!

Today’s class had TWO desserts! Mexican Hot Chocolate Cupcakes with Cinnamon Butter Cream Frosting AND Ultimate Espresso Cream Cheese Brownies with Chocolate Fudge Frosting:

Each was adorned with a chocolate covered espresso bean. The brownies were rich and decadent and I loved the cream cheese center. The cupcakes stole the show though. The cupcakes themselves were the perfect spongy, cakey texture. The frosting was unbelievable. Unbelievable.

After class,  I made a quick trip to Lululemon. I received a discount coupon from Team in Training and needed to use it before it expired. I bought 2 capri pants, a tank top and a headband. :)

I picked up the kiddos and came home for some good old half marathon training. I put on my new Lululemon gear and tackled four miles. I don’t like running in the afternoon and had a somewhat full stomach so I told myself I could go as slow as I wanted. While running slow, I kept singing to myself “She’s an easy runner” to the tune of Phil Collin’s “Easy Lover” song. I couldn’t get it out of my head!

As if I didn’t have enough to eat today, hubby and I are going out to dinner with some friends who just got engaged. Better get dressed!

  1. I'm a big fan of hip hop myself. But anything that makes me want to shake my booty is a go! All your yummy treats posted on here are drool worthy, it's almost the end of day 2 with no sweets and I think I've talked about chocolate maybe 10 times today! Hope you have a great dinner!

    a)I'm jealous of your bunco nights. When I think bunch, I always think middle aged women, but your nights sound so fun.
    b)even more jealous of your desserts!! Tiramisu and those chocolate cakes.....YUM!
    c)everyone seems to think lululemon is the greatest thing ever...I've never worn any of their stuff...is it as good as they say?

  5. I love hip hop too and pop! I am so jealous of all the great food you get to eat at your cooking classes! They all looked and sounded delish! Oh and can I get your meatloaf recipe please? Or is it posted somewhere here? I will have to look for it if it is. I've been wanting to make some meatloaf for a while now. I've never made it before and have been on the lookout for the perfect recipe. :)

  6. LOL about the meatloaf. I believe I make the best of a lot of things, so I rarely get satisfied with others, too. Unless I paid for it. Heh.

    I'm all into the music in Glee. I love broadway musical songs. Disney songs. And occasional Korean hip hop. :-)

  8. [1] Ha ha on easy runner. When I snowboard, I sometimes sing "she'll be comin' 'round the mountain when she comes" in my head. It's great to have a personal soundtrack.

    My fave is probably alternative or rock - but hip hop/pop is fun too! OH wow - post your lululemon finds!! Do you have to get your pants hemmed??
