138.6 yesterday…138.2 today

Happy New Years Eve! I can’t believe this is the last post for 2010!

Wednesday night we never made it to Benihana. We called and they were booked the whole night. Oh well. We went to Islands instead. I had a turkey burger on a wheat bun with some fries:

Yesterday’s morning’s breakfast was a whole wheat waffle with peanut butter and an apple:

I was actually pretty productive yesterday. I had my stove fixed and paid all the bills. I had tons of pictures I had taken that I hadn’t put on CDs yet so I took care of that.

Lunch was a repeat of the day before:

I washed and STYLED my hair. It had been a few days since I actually blow dried my hair. I washed all the kids’ laundry and cleaned up the house a bit. I put all the kids stuff from the past year in scrapbooks. I basically kicked ass.

Our family from out of town plus the in town family came home for dinner. We ordered Pat & Oscars. I had a little of everything:

Pizza, penne pasta, bbq chicken and Greek & Caesar salads. I went back for seconds of course. I also made some cookies with pre-made dough. I had two of those as well.

That brings us back to today. I did two things today that I hadn’t done in awhile: worked out and ate veggies.

Breakfast was an egg beater burrito with a wedge of Laughing Cow Chipotle cheese and Cholula hot sauce:

Then I went to Cardio Muscle class. I’m not going to lie…it was hard. Between having the flu and not working out for a week and half, I really struggled. But I’m glad I went and burned some extra calories for tonight! :)

I came home to shower and get my laundry started. Lunch was leftover pizza and a big salad:

Veggies! Welcome back into my life!

Tonight we are going to our club for dinner and to celebrate the new year! We haven’t gone out for New Years Eve in a few years so I’m excited!

Tomorrow being New Years, I’ve started thinking about my new years resolutions. I actually found mine from last year and completed most of them except for running my first 5K. My sister in law actually might have talked me into running a half marathon in June in San Diego so I may just skip the 5K this coming year too! :)

This coming year I’d like to keep my weight steady without stressing too much about it (HARD for me), eat lots of fruits and veggies and have more patience.

I can’t believe it’s almost New Years Eve!! I’m so excited!
Monday night we drove to Orange County and had dinner at my mother in law’s house. My brother and sister in law were in town from Austin and they love In N Out and don’t have it there so it was an obvious choice for dinner.

In N Out Double Double. One of my favorite burgers ever! I had some fries as well. Then we were off to our hotel to call it a night.
Tuesday morning we headed over to Disneyland. There were WAY TOO MANY people there that day. They stopped sales of tickets when they reached capacity (of 85,000 people) at 10:30AM!!!!!!!!!! Ridiculous. Mental note: never go to Disneyland the week between Christmas and New Years.
I didn’t eat much while I was there. My mother in law made turkey sandwiches so I had one and a half of those while trying to maneuver around the park. After we had had it, we drove back to San Diego.
We all went over to our friends house for dinner. My friend’s mother in law is Italian and an excellent cook so she made dinner for us. I love it when other people cook for me! So rare!

It was delicious! Pasta, breaded chicken and a simple salad. I had two full plates. :)
For dessert I had one of the Italian cookies she made:

She made the jam from scratch that was inside. They are called Gninulille and are Calbrese Christmas tradition. Fabulous! I also had some champagne and red wine. Life is good. :)
This morning I made an egg beater sandwich on a sandwich thin with a slice of Swiss and some turkey deli meat:

I had a repair man come, did some laundry and took down the Christmas tree.
For lunch I had some leftover egg noodles and marinara sauce. I really need to get to the grocery store.

I also really need to go to the gym. It’s been over a week. I’m finally feeling better enough to go. I will make best efforts to go to Zumba tomorrow but I have another repair man coming during that time so we’ll see. :(
I took the kids to get their checkups/flu mists and came home.
Now I’m relaxing with a glass of wine while watching the rain. :)

I think we are going to take the kids to Benihana tonight. I have a coupon for my birthday that expires soon…..wouldn’t want it to go to waste!

I wish I could say that I’ve eaten interesting foods in the last 24 hours but I can’t. I haven’t been grocery shopping and we are going to Orange County tonight for the night so there’s no reason to do so until I get back. I promise I will cook again…eventually. :)

I pulled out some leftover lasagna out of the freezer for dinner last night. I made a Caesar salad to go with it:

This morning I got to work on changing beds, finishing laundry and other stuff around the house. When I finally got around to breakfast, it was getting kind of late. I decided to just make a quick roast beef and swiss sandwich:

We are leaving tonight for Orange County because we are going to Disneyland tomorrow with some family from out of town. Hopefully I’ll have some good eats to report when I get back! :)

Just like that, Christmas came and went. How does it all go so fast? I had such a great time with my family but now I’m home and I’m excited just to relax for once! :)

Christmas Eve’s lunch was an old family favorite: King Taco. I had a chicken burrito:

I love all things spicy but their hot sauce is crazy hot. I still ate it. :)  Christmas Eve was spent prepping for Christmas dinner and making another family favorite: Beef Stroganoff. We eat it every year for Christmas Eve.

My dad made his famous salad. What a great meal! It’s one of my favorite dishes ever!!

Christmas morning we immediately opened gifts. :)  Afterwards my brother started making his famous spicy eggs. I put together the trifle I had planned for dinner:

The rest of the day was spent relaxing, hanging out and napping. Eventually I had to get my butt up and cook dinner.

Beef Wellington, roasted red potatoes and peas. I still wasn’t feeling so hot so I didn’t eat that much. I only had a couple bites of dessert. :( After dinner it was time to drive home and go to bed.

I did tons of laundry, ran the dishwasher and put all the gifts away. We decided to all go to Souplantation for lunch.

Merry Christmas Eve!

It's Christmas Eve and I have the flu. :( Ugh.

On Wednesday my mom and I stopped for lunch at Red Brick Pizza. We split a pizza:

Both were excellent and we ate every bite! We got back to her house and then I hit the road for my brother and sister in law's house. My sister in law and I split two bottles of wine while we were waiting for my brother to get home from work. Oh my.

We met some friend at Irori Sushi Restaurant in Marina del Rey for dinner. There was lots of wine and sushi!

After that we called it a night.

And I woke up feeling like death. Ugh. I ate some toast with peanut butter and showered and started to feel a little better. My sister and law went to have lunch at Sunin Lebanese Cafe. I have been wanting to try this place forever! We started with the falafel and hummus plate but I almost forgot to get a picture!

I ordered the lamb kabob for my entree:

It was so freaking amazing!!!! We then got stuck in traffic on the way to my parent's house but we finally made it. By then I started feeling really bad again so I wrapped up in a blanket and spent the next few hours on the couch.

Not sure if you all know this or not but my birthday is the same day as my dad's birthday! We had planned on celebrating both birthdays last night. I was feeling well enough to open gifts for sure! :)

For dinner, my dad made a salad and my mom made a rack of lamb with potatoes and veggies:

But the best part was dessert: Birthday Cake!

My favorite kind of cake: chocolate with chocolate frosting!!

After dinner I went to bed. I am feeling a little better today so that's good. Ok folks, enjoy your day!!!

140.8 yesterday....Crab Mac and Cheese Recipe!

Is this rain ever going to stop? Maybe I should start building my arc now!

For dinner Monday night, I pulled some leftover Chicken Tortilla Soup out of the freezer and reheated it. I added shredded cheddar cheese, red onions and a dollop of sour cream. Perfect for a rainy night!

I made a batch of my favorite cornbread. This time I just added shredded cheddar cheese and the last of the creamed corn from Thanksgiving that I also had in the freezer.

Yesterday's breakfast was a light wheat English muffin with Barney Butter and a small Gala apple:

I  threw all my stuff in the car and hit the road for my parents house. Considering all the rain, it didn't take too long to get there.

I brought my stuff into the house and we jumped in the car to head over to Marston's for lunch. They have these awesome popovers:

I ate three and had to restrain myself from eating more. I ordered the Spicy Salmon Caesar salad:

From there we went to a couple different grocery stores to get everything on my list for all the things I'll be cooking in the next few days.

We came home to unpack and relax for a bit before it was time to start making dinner: Crab Mac and Cheese!

I had this same recipe in cooking class recently but they used lobster instead. Crab is cheaper and Costco sells a can of lump crab meat that is awesome!

Crab Mac and Cheese
Serves 8

6 Tbsp unsalted butter
1/4 cup finely chopped shallot
6 Tbsp all-purpose flour
2 cups seafood broth
2 cups heavy cream
1/4 cup cream sherry
1 1/2 cups shredded sharp white cheddar cheese
1/2 cup grated Parmigiano Reggiano cheese
1 can lump crap meat or 4 Maine Lobster tails, cooked and cut into 1/2 inch pieces
1 pound Barilla elbow macaroni or cavatappi cooked 2 minutes less than al dente
1 cup fresh bread crumbs
1/2 cup finely shredded sharp white cheddar cheese
2 Tbsp finely chopped parsley
3 Tbsp olive oil

1. Preheat the oven to 350 degrees and coat the inside of a 13x9 inch baking dish with non-stick cooking spray.
2. In a 3 to 5 quart saucier, melt the butter and saute the shallots for 2 minutes, until softened. Add the flour, and whisk for 3 minutes. Slowly add the stock, and bring the mixture back to a boil. Add the cream, and sherry, and continue to whisk until bubbling.
3. Remove from the heat and stir in the cheddar, Parmigiano and cooked crab/lobster meat. Taste the sauce for seasoning and adjust using salt or a dash of Tabasco in place of pepper. Add cooked pasta.
4. Transfer the mixture to the prepared pan.
5. Do-Ahead: At this point the Mac and Cheese can be refrigerated for up to 24 hours, or frozen for up to 1 month. Defrost and bring the casserole dish to room temperature for 30 to 45 minutes before baking.
6. In a small bowl, stir together the bread crumbs, remaining cheese, parsley and oil, until the crumbs are moistened. Sprinkle evenly over the Mac and Cheese and bake for 30 to 45 minutes until the crumbs are crispy and the sauce is bubbling.

Yum!! My dad made an awesome salad to go with it!

I brought a loaf of my favorite English Muffin bread to my parents house so that's what I had for breakfast:

One slice with peanut butter and the other with honey butter. I did go back for a third slice with honey butter. :)

Ok folks, I need to hop in the shower and get dressed. On the agenda today: lunch with my mom and then I'm heading over to my brother and sister in law's house. We are going out for sushi tonight! Yippee!

I did something brave today. I went to Costco with five days left until Christmas and in the rain to boot. At least all my errands are behind me and I can relax inside while watching the rain, not being in it.

We went to Garcia’s Mexican Restaurant last night for dinner. I ordered the shrimp enchiladas:

They were just ok. I ate both of them and skipped the rice and beans.

Breakfast this morning was something I hadn’t had in awhile: cereal!

I had Special K Cinnamon Pecan, Fiber One and almond milk. In the other bowl was the last of the cantaloupe.

I went to Cardio Muscle class and got a great workout in….good thing because it might be the last workout I get for awhile.

I came home to change and braved Costco. It wasn’t so bad actually. I got in, I got out but I did get wet. I went to get gas, go to the bank and to the grocery store. I picked up some sushi at Costco for lunch:

Now I need to get packed up…I’m going to my parents house tomorrow through Christmas day. Yippee! Hubby and the kids will be joining us on Friday.

140.4 yesterday…138.8 today

I hope everyone is having a wonderful weekend! It has been raining here all weekend but I’ve been enjoying the grey, dreary weather actually!

Friday night I made brownies:

Here’s the recipe.  I liked these brownies. They were rich and a little dense. The hubby told me that he didn’t like them for those very reasons. Although…he keeps eating them. Hmmmmmm…

For dinner I kept it easy. I defrosted some of my favorite marinara sauce and cooked up some whole wheat penne. I combined the two, put some shredded mozzarella on top and baked it until the top was golden brown. Along with a Caesar salad, it was  great meal!

I went to spin class. When I sat down on the spin bike, I decided to “bring it.” I gave that class everything I had. I left a drippy, exhausted mess. But oh my, I felt great! I love that feeling!

After getting cleaned up, we all went to Pei Wei for lunch. I had my standard kid’s size honey seared shrimp with brown rice, veggies and tons of chili sauce:

After getting the last of the gifts wrapped I went to my nail appointment.  There’s a Mediterranean restaurant next door so I picked up dinner there.

Lamb kebob with no rice, extra salad. It came with pita and tzatiki. YUM!!! I was in love with this dinner!

This morning the kids slept in so I got to as well! After a few cups of coffee, I got dressed for breakfast at our club with some friends. They had a buffet with the usuals: scrambled eggs, bacon, sausage, potatoes, French toast, fruit etc.

The rest of the day was spent chilling at home watching the rain. I love watching it rain…as long as I don’t have to go out in it. :)
