140.6 Return of fruits & veggies!

I have to admit that I was excited for Monday morning.  After a few vacations and many more cheeseburgers, my body was ready for a good workout and some healthy eats!

Last night, I made something fast and easy for dinner:

Whole wheat spaghetti with marinara and grated Romano cheese. Simple. I have a lack of fresh produce so I didn’t make any veggies to go with it. After washing the dishes, unpacking and putting the kids to bed, I was excited to get into bed myself! I was asleep before 9:30pm.

Breakfast was an egg beater sandwich on a light, wheat English muffin with some salsa and Swiss cheese. Some strawberries completed the meal:

I took the kids to school and then went to both Cardio Muscle and Zumba classes. After two great workouts, I came home to quickly clean up and grabbed this on my way to pick up my daughter:

My first honeycrisp apple of the season! Oh my….how I love thee! I went to pick up some dry cleaning. By the time I got home, I was pretty darn hungry. Since it has been raining all day, I knew I wanted soup for sure. I heated up some Trader Joe’s pea soup and made a turkey sandwich on a sandwich thin. I put a Laughing Cow garlic and herb wedge, tomato slices and green bell pepper on my sammie:

Then I spent the next two hours on the phone with AT&T trying to figure out why my internet stopped working. Ugh…it finally got resolved. During all this my hubby came home early and fortunately was able to pick up my son from school. One trauma taken care of.

Next trauma: trying to take a splinter out of my son’s foot. He won’t let me get near him with the tweezers. Wish me luck!

    My favorite soup is probably eggdrop! Or chicken tortilla. :)

  2. Hmm...I'm not a big soup person but I do enjoy a good butternut squash soup or egg drop soup.

  3. I remember screaming when my Dad would have to take splinters out of me. It was like he was taking off my arm or something. I love soup! Any and all kinds of soup. I could live on it.
