Happy Tuesday!! The weatherman said it was going to rain today but I’m still waiting for it!

Last night’s dinner was super simple. I bought another jar of Trader Joe’s Thai Red Curry sauce and put it on some chicken and veggies. I microwaved some Trader Joe’s brown rice and Voila!

This morning’s breakfast was Fage yogurt with Fiber One cereal and strawberries:

I took the kids to school and went to Starbucks to get some work done while I waited for my cooking class at Great News to start. I grabbed a green tea and a very smushed Fiber One bar to much on.

Today’s class was entitled “Fall Comfort Foods.” It was the perfect cloudy weather for this class! I was definitely in the mood for some fall comfort!

The first recipe did not disappoint: Mac and Cheese Soup with Bacon and Blue Cheese Crumbles:

Holy yum!!! Not healthy at all but unbelievably delicious!!!

Next was Baked Garlic Chicken Breasts with Potato Chip Basil Crust:

The chicken was so moist inside and crispy on the outside. It was drizzled with a fabulous lemon aioli. Loved it!

The third recipe was Turkey Meatloaf with Feta and Sun-Dried Tomatoes with Olive Oil and Garlic Smashed Potatoes:

I love meat loaf. I made a pretty darn good one….this one was very different but very good! I loved it! The smashed potatoes were lighter because of the olive oil yet still decadent.

The next recipe was Pork  Chili Verde Enchiladas with Tomatillo Sauce:

Another winner! Loved it!!

Dessert was right up my alley: Chocolate Layer Cake with Milk Chocolate Sour Cream Frosting and Ice Cream:

YES!!!!!!! A moist chocolate cake!!! Yes!!!!! And it was simple to make…you just dumped all the ingredients into the mixer at once and let it rip. Love it!

After class, I picked up my daughter from school and we ran to the grocery store for some necessities. We picked up my son and came home. I just got back from a nice run/walk around the neighborhood. It’s the perfect weather to run outside!

It’s our friend’s birthday so we are taking  the kids out to dinner with him and some other friends. Good night all!

Meatloaf: Yay or Nay?

  1. Never had meatloaf! True story! That mac & cheese soup looks AWESOME! I love that sauce - have it over rice a lot with chicken and red pepper flakes. :)

  2. Not so much on the meatloaf. My mom made us eat it to much as kids and I remember gagging on it. Those dishes from your cooking class though, another story...yum!
