139.6 yesterday, continued…

After blogging yesterday, I made breakfast:

Low fat waffle with Barney Butter and a side of cantaloupe. I decided to skip spin class….I had a bunch of things to do and honestly, my body was really tired for all the workouts this week. It needs a break!

I made a cake (for a bbq today), did all the laundry and made lunch:

Turkey and avocado sandwich on whole wheat bread with tomato, cucumber and lettuce. I made a salad of butter lettuce, tomatoes, green onions, cucumbers, shredded carrots and Girard’s Light Champagne dressing.

I got myself and the kids dressed and we went to our friend’s son’s 6th birthday party at a bowling alley. The kids had a great time bowling! We went to The Hamburger Factory for dinner. We had to have their fabulous wings of course!

I ordered a turkey burger with cheddar cheese and avocado:

Delish! We were finished with dinner and home by 5:30pm. Kids were asleep before 7:30 and I was asleep by 8:30….

….and didn’t get up until 7:30am this morning! I feel SO much better!!!

I came down and made the ganache for the cake I made yesterday. With some orange sprinkles, it’s ready to go!

Since I love you so much, here is the recipe for this cake. It is AMAZING.

Freaking Amazing Chocolate Cake

1 box chocolate cake mix

1 small box instant chocolate pudding

3 large eggs

1/2 cup water

1/2 cup oil

1 cup sour cream

12 oz chocolate chips

Preheat oven to 350 degrees. Combine the first five ingredients in your mixer and mix on medium speed for 4 minutes. Stir in sour cream and chocolate chips. Pour into greased Bundt pan and bake for 45 minutes. Cool in pan.

Easy right? For the ganache, I melted about 6 oz bittersweet chopped chocolate the microwave and then whisked in heavy cream until it reached the desired consistency. I can’t wait to have a slice (or two?) later today!

Next up was breakfast. Egg beater burrito:

I smeared a Laughing Cow Chipotle cheese wedge on a wheat tortilla and sautéed spinach, onions and zucchini. I drizzled some taco sauce on top. YUM.

I need to check my email and get ready for another birthday party this morning. Happy Sunday everyone!

  2. My Mom used to make a cake like that! It was insanely chocolaty and soooo good! But she never put ganache on top - that takes it over the top for me - love it!
