Ugh...I ate way too much last night...more on that later. Sorry I was M.I.A. last night...we had family in town and I was too pooped to post last night. Let's rewind....

Wednesday night started with some Chardonnay while I was cooking:

I tried a new recipe for Fiesta Chicken & Rice that I've had in my "try me" recipe file for a long time....so long, in fact, that the printout date on the recipe read 2/18/04. About time I try it!!

Fiesta Chicken & Rice
(6 servings; 4 points per serving)

1 (14.5 oz) can diced tomatoes, undrained
1 (4.5 oz) can chopped green chilis, undrained
1 tsp olive oil
1 cup instant brown rice, uncooked
3/4 cup chopped onion (about 1 small onion)
2 cloves garlic, minced
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1/2 tsp salt
1/4 tsp pepper
1/4 tsp ground cumin

Drain tomatoes and green chiles, reserving liquid from each together in a 1-cup measuring cup. Add water to reserved liquid to measure 1 cup; set aside. Set tomatoes and chiles aside. Coat a large nonstick skillet with cooking spray; add oil. Place over medium heat until hot. Add rice, onion, and garlic; saute 3 minutes or until rice is golden. Stir tomato, green chiles, reserved 1 cup liquid, chicken and remaining ingredients into rice mixture. Bring to a boil; cover, reduce heat, and simmer 20 minutes or until liquid is absorbed and rice is tender.

I added black beans and sauteed zucchini and red bell pepper to mine:

Then I found it to be a little bland so after this picture was taken I stirred in a bunch of salsa and Cholula and it tasted perfect!

Thursday morning was an egg beater sandwich on a light wheat English muffin with a slice of light swiss cheese and a side of cantaloupe:

I went to Lisa's for day one in our last and final week of P90X. It's "recovery week" so the video was Yoga.
I came home and heated up the last of my stuffed shells and put them over some spinach drizzled with balsamic vinegar:

I really love these shells. I need to make them more often! I went with Lisa to grab some frozen yogurt. She wanted to grab a coffee so I tried a free sample of the VIA brew at Starbucks:

They didn't have any fat free milk on the counter and I didn't want to wait for it so I just drank it straight. Ugh...not a fan. But it's not fair for me to say it wasn't good....I don't drink my coffee black ever so it wasn't a good way for me to compare!

Next was Sweet Things for my beloved frozen yogurt. This time I went with Funfetti and Peanut Butter Supreme:

Then we ran over to a new Farmer's Market that starting up close by. I had a great time! I wanted to buy so much but since I just loaded up on fruit and veggies at the grocery store, I just bought some raspberries, beautiful strawberries and hummus and fresh pita. I got a Cilantro and Jalapeno humms as well as a Garlic & Chive hummus. Mmmm....excellent!
We had family coming over for the night so I came home and started to put out some appetizers: my new hummus & pita, crackers, bread, etc. I had two glasses of Chardonnay over the evening:

We ordered Chinese for dinner. I haven't had Chinese food in so long that I went a little overboard:

The plate was the size of my head and I ate it all. And if that wasn't bad enough, I hit up some more birthday cake:

UGH.....I felt sick....too full. I hate that feeling. I usually do a very good job not overdoing it and feeling sick. This just reminded me how much I dislike to feel like that. Sometimes you need little reminders you know?

With today being my Weight Watcher "weigh in" day, Chinese food loaded with sodium probably wasn't the best option but oh well. I've been noticing that I haven't been eating as clean/nutritiously as I was when I first started P90x. I've definitely let things slip and would like to clean things up a bit and get off the last few pounds that I've recently put on. So, with that being said, today is a new day!

Breakfast was plain non fat yogurt with Fiber One cereal, a little Trader Joe's High Fiber Fruit & Nut Medley cereal, raspberries, strawberries and blackberries:

I decided a good calorie burn was in order today so I did the Core Synergistics video with Lisa (forgot how much I didn't like this video....it's hard!!) and then went to Zumba. I struggled at first because I was tired but somewhere into it, I found my groove.

Lunch was a salad "beast" (thanks for the term Gina!)

In this beauty was mixed greens, spinach, tomatoes, red bell pepper, cucumber, shredded carrots, a dollop of the cilantro & jalapeno hummus, black beans and a little Trader Joe's Goddess dressing. Fabulous!

Then it was off to my nails appointment. I stopped and got a chai iced tea from Peet's.

I came and was hungry so I had a snack to hold me over until dinner: a Flat Out wrap with sliced turkey, mustard, carrots & spinach:

Now I need to hit up the laundry and get dinner going in a bit. I think I've done a good job my "first" day back on plan. :) Let's hope the rest of the evening cooperates! :)

  1. I hate that feeling of being over full too. I think it's worse as you get older.
    That said, I don't think you've been doing to bad in terms of your eats, and obviously, you've been fantastic in your exercise!
