Last night's dinner was really good! It was another recipe I've had since 2004 that I haven't tried yet. It's called: Fast and Easy Lasagna.

Fast and Easy Lasagna
9 servings: 6 points each

1 lb extra lean ground beef
26 ounces marinara sauce
8 ounces tomato sauce
2 tsp Italian seasoning
8 ounces yolk-free egg noodles
8 ounces fat free sour cream
8 ounces fat free ricotta or cottage cheese
1 1/2 cups light mozzarella cheese, shredded

Preheat oven to 350 degrees.
Lightly spray 13x9 baking dish with cooking spray. Set aside.
Brown ground beef and drain well.
Add pasta sauce, tomato sauce and Italian seasoning. Simmer 10 to 15 minutes.
While sauce simmers, cook noodles according to package directions and drain.
Combine hot noodles with sour cream, ricotta/cottage cheese and half the mozzarella cheese. Layer ingredients by pouring half of the noodle/cheese mixture on bottom of baking dish. Top with half of the pasta sauce mixture.
Add remaining noodle/cheese mixture and top with the rest of the sauce. Bake for 30-45 minutes.
Top with remaining mozzarella cheese and and return to oven for 2 minutes or until cheese melts. I actually broiled mine so the top would be brown:

I loved this!!!! So simple and delicious. After the kids were in bed, I had some Special K granola with almond milk and dried cranberries:

Breakfast this morning was honey graham bumpers cereal, fiber one cereal, strawberries, raspberries and almond milk:

Not surprisingly, the cereal didn't fill me up. Cereal just doesn't do the trick but I really wanted it this morning.

I decided to have another "salad beast" for lunch. This time I mixed a can of tuna with a Laughing Cow Garlic & Herb cheese wedge (I saw this idea somewhere and have been meaning to try it) and put it atop a bed of mixed greens, spinach, tomatoes, cucumber, red onions, red bell pepper and balsamic vinegar:

I like the cheese with the tuna. It wasn't as creamy as I'd like but it did give a nice flavor to the tuna.

P90X time...today's video was my last Kenpo. Bye bye Kenpo!!!! I came home and had some strawberries and raspberries for a snack:
