139.4…Lights Out

Wednesday night’s dinner was in two parts. The first part was a can of pea soup before I went to Back To School Night.

The second part was after I got home.  Turkey sandwich and pickles.

Pretty exciting night huh?

I had an egg beater sandwich for yesterday’s breakfast with a slice of cheese and a side of strawberries.

I took the kids to school and then drove to Los Angeles to visit my mom and dad. My dad is a tough dude. He’s still continuing to improve. Thank you again for all your thoughts and prayers!

My mom and I picked up New York Deli for lunch. I had a BLT with pickles and cole slaw.

I told my mom when I arrived that I really wanted either lunch or dinner to be El Pollo Loco. Since we didn’t have it for lunch, we planned on it for dinner. That is until the thunder, lightening and rain happened. All of a sudden (after my mom finished bragging about how their house never looses power) the power went out. My parents have an electrical gate so we couldn’t open that so we were stuck. It was a “dig in the fridge for dinner” kind of night.

I came up with some leftover beef kabobs, baba ganoush and pita.

We tried to eat quickly and get ready for bed before it got too dark. Just as we finished doing everything, the power came back on. Too late for El Pollo Loco. Oh well.

This morning I woke up early so I got dressed and went to Target to get a few things. They had a Starbucks there so I helped myself to a skinny vanilla latte which I ate with breakfast when I got back to my parent’s house.

Toasted English muffin with peanut butter.

I hung out for a bit and then drove back to San Diego. I stopped at Chipotle for lunch. I ordered the chicken bowl with guacamole (a must!) and minus the rice. I figured I’d swap the rice calories for the guacamole calories.

Excellent! Afterwards I picked up the kids and we came home. I spent the rest of the afternoon starting a project I’ve wanted to do for awhile: clean out and re-organize my closet.

Dinner time came and went and I just wasn’t hungry. That bowl from Chipotle is really filling! Now that I’m typing this, I’m realizing that I’m starting to get hungry. But I’m in bed. Decisions, decisions.

 What do you do when you’re hungry right before bed? Give in or stick it out until morning?

139.0…Asian Salmon

Last night I did something I haven’t done in awhile: cooked. Life has totally gotten in the way of my kitchen time. Not only did I cook but I made something that rarely gets made in my house: salmon. My husband and kids won’t eat it and I love it. He wasn’t home for dinner last night, so salmon it was!

Asian Salmon (Serves 2)

  • 2 salmon filets
  • 2 tablespoons olive oil
  • 2 tablespoons rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon packed brown sugar
  • 2 cloves garlic, minced
  • 1 pinch ground black pepper
  • 2 tablespoons minced onion
  • 1 tablespoon sesame oil
Directions:
  1. Make several shallow slashes in the skinless side of the salmon filets. Place filets skin-side down in a glass baking dish. In a medium bowl, whisk together the olive oil, rice vinegar, soy sauce, brown sugar, garlic, pepper, onion and sesame oil. Pour the liquid over the salmon, cover and refrigerate for 1 to 2 hours.
  2. Preheat the oven to 350 degrees F.
  3. Remove cover from salmon, and bake in the marinating dish for about 30 minutes, or until fish can be flaked with a fork. Serve salmon and pour sauce over.

I served the salmon with brown rice and asparagus and enjoyed every bite. I loved the sauce so I loaded it on. :)

Breakfast this morning included the return of an old favorite: Pineapple Chobani. I topped it with Cascadian Farms granola, strawberries and raspberries.

I took the kids to school and met some friends at the gym for a workout. Afterwards Lisa and I ran a few errands and stopped at guess where for lunch.

It’s the Wahoo’s diet! Lisa has lost a pound a day this week and she swears it’s the Wahoo’s. I’m on board. Love the shrimp burritos!

Tonight is Back To School Night and then tomorrow I’m off to Los Angeles to visit my dad. Enjoy the rest of your day!

140.4…Disappointment

So…yesterday I mentioned that we were going to Phil’s BBQ for dinner right? Well, we met Alicia, her husband and kids there just to find out that Phil’s is closed on Mondays.

WHAT!?!?!?!?!

Talk about a bummer! I was really looking forward to some ribs and onion rings! Applebee's was a few doors away so that’s where we (not so happily) ended up. All of us were starving so we got a bit carried away.

My husband wanted the appetizer sampler so we ordered that.

We also haven’t had hot wings in awhile so we ordered some of those.

Another craving that needed satisfying was the one for ribs. So we made it happen.

At that point, our expectations were very low but the ribs turned out pretty good actually. Yes, not as good as Phil’s but what are you going to do!?! 

After that glutinous indulgence, I needed to get back on the wagon today. Breakfast was an egg beater omelet with cheddar cheese and strawberries.

I took the kids to school, went to a PTO meeting and then met Lisa and the gym. After our workout, we went to Wahoo’s AGAIN! We enjoyed our lunch so much yesterday that it deserved a repeat.

Classic shrimp burrito. 400 calories and perfectly filling.  After lunch, it was a trip to the grocery store and then to pick up the kids from school.

Tonight I’m going to do something I haven’t done in a long time: COOK!

139.8…Fun In The Sun

Before leaving for Palm Springs for Dina’s birthday weekend on Friday night, I went with my husband and the kids to Pei Wei for dinner.  We split Dan Dan Noodles:

After dinner I picked up Alicia and headed to Palm Springs to meet Dina and Lisa. When we arrived, they were just finishing dinner at a sushi restaurant so we joined them for a glass of wine.

We then headed to our hotel, Miramonte, to check in and relax for the rest of the evening.

Saturday morning we headed to the Cabazon outlets for some shopping! Along the way we picked up breakfast at a bagel shop. I opted for egg and cheese on a jalapeno bagel.

Eh…it was kind of bland actually. Thank goodness they had hot sauce which I put on every bite. Hot sauce always saves the day.

In between all the shopping, we stopped for lunch at the food court. I had a surprisingly good piece of pizza and tomato salad.

Around 5:30pm, we called it a day. We were all shopped out. I think we did pretty well!

We headed back to the hotel to get ready for dinner at Circa 59 at The Riviera Hotel.

We had a great table outdoors at Circa 59. The decor there is very cool…modern with real chandeliers hanging from the trees.

Refreshing wine. :) It was SO hot in Palm Springs!

I started with the “BLT” salad: Sugar-Braised Bacon, Baby Gem Lettuce, Roma Tomatoes, Jalapeno Ranch Dressing.

For my main course, I went with the Roasted ‘Huntsinger Ranch’ Chicken: Wild Mushrooms, Midnight Tomatoes, Goat Cheese Dumplings, Madeira Cream Sauce.

Dessert was the Chocolate Gooey Cake with Vanilla Ice Cream, Hemp Tuille and Mocha Cappuccino Sauce. Happy Birthday Dina!

The hotel had a DJ so we went to the bar and danced for awhile.

The air conditioner was broken (so they said) so eventually it was too hot to dance any longer. We went back to our hotel and went to bed.

Yesterday morning we indulged in a delicious breakfast buffet complete with champagne.

The eggs benedict were outstanding! I split another one with Alicia.

We spent the rest of the day at the pool. It was HOT! Eventually it was time to head home.

For dinner, I went with husband and kids to Souplantation.

After lunch we ran errands and then I went to pick up the kiddos from school.  Tonight we are meeting Alicia and her family at Phil’s for some BBQ! Can’t wait!

Do you like hot weather? What is your ideal temperature? I do when it’s reasonable. It was over 100 in Palm Springs…that’s a bit much. My ideal temp is 78-82 degrees. ;)

Riding The Freeways

When I’m at my parent’s house it’s always a challenge to figure out what to have for lunch and dinner. My brother and his wife came over last night and between all of us, we were able to choose some different for dinner: Luciano’s Italian Restaurant.

I ordered a Shrimp Caesar salad.

It was pretty good and different from all the other stuff we’ve been having.

Breakfast this morning was toast with peanut butter…my standard breakfast at my parent’s house.

I jumped in the car and headed to a couple of appointments. Lunch was a quick stop at El Pollo Loco. I ordered a BRC burrito.

I could have eaten two of them but oh well.

I picked up the kids from school and headed home to get packed for Palm Springs. So far today I’ve been on EIGHT different freeways. I still have a two hour drive tonight to Palm Springs. I wish you could get points or credit for freeway mileage. I would be a platinum freeway driver!

141.6…Overload Of Goodness

Last night we took some out of town friends to my favorite restaurant: Firenze. I enjoyed myself immensely…maybe a little too much.

It all started with some delicious Cabernet.

Then moved on to various appetizers. My husband and I split our normal Chopped Caesar salad.

We also tried the Bruschetta which I’ve never tried there before.

Grilled ciabatta bread brushed with pesto and topped with diced roma tomatoes, basil, garlic and extra virgin olive oil. Why have I not ordered this there before? It was amazing!!

Our friend ordered the Calamari Venezie (fresh, hand-cut calamari sautéed with capers, red onions, extra virgin olive oil, white wine and diced tomatoes) which he shared with me.

Another amazing dish I’ve never had there before! Since we were on a roll with the new stuff, I decided to order a main course I had never ordered there before.

Vitello Saltimboca (veal scaloppini sautéed with olive oil, shallots and white wine topped with prosciutto, sage and fontina cheese then baked to finish served with fresh vegetables and pasta). While it was extremely tasty, it wasn’t as good as the Pollo Piccata I had the other day.

Dessert was not new to me.

Chocolate Lava Cake with vanilla ice cream. What a perfect way to end a very decadent evening. 

This morning I knew the scale would not be friendly. How could it after all the extravagance the night before!?! Oh well…..

I wasn’t terribly hungry at breakfast time (I wonder why??) so I opted to just microwaved some egg beaters, added some shredded cheddar cheese and made a breakfast burrito.

Then it was time to hit the road to Los Angeles to visit my dad. He’s still making great progress and seems to be getting better!

My mom was in the mood for a deli sandwich for lunch so we found a place called New York Deli to try. I opted for a roast beef sandwich with cole slaw.

The roast beef wasn’t as rare as I’d like. I ate half the sandwich (it was big) and saved the other half for later.

Tonight my brother and his wife will be joining us for dinner. It will be nice to all get together.

Tomorrow I will be driving back to San Diego, running some errands, picking up the kids and then driving to Palm Springs for my friend Dina’s birthday celebration. That means more than four hours in the car all together tomorrow. Good thing I like to drive. :)
