I may have discovered the best brownie recipe ever.

My son wanted me to make brownies and when he saw this recipe, he declared it the one he wanted me to make. What a smart boy!

We are a S’mores loving household. We love roasting the marshmallows over the fire pit in our backyard. These S’mores brownies taste like the real deal!

S’mores Brownies

Recipe Courtesy: Beantown Baker

10 graham crackers, broken in half (20 squares), divided
3/4 cup butter
4 oz unsweetened Chocolate
2 cups sugar
3 eggs
1 tsp vanilla
1 cup flour
2-1/2 cups miniature marshmallows
1 cup semi-sweet chocolate chunks or chocolate chips

Heat oven to 350°F.

Line 13x9-inch pan with foil; spray with cooking spray. Place 15 grahams in pan, with sides overlapping slightly. Break remaining grahams into pieces.

Microwave butter and chocolate squares in large microwaveable bowl on high 2 min.; stir until chocolate is completely melted. Add sugar, eggs and vanilla; mix well. Stir in flour. Pour over grahams in pan.

Bake 30 to 32 minutes or until toothpick inserted in center comes out with fudgy crumbs. Do not over bake.

Sprinkle with marshmallows and chocolate chunks. Bake 3 to 5 min. or until marshmallows begin to puff. Press reserved graham pieces gently into marshmallows.

(Optional) Using your kitchen torch, toast the marshmallows.

Cool. Use foil to lift brownies from pan before cutting to serve.

Last night we all went over to Alicia’s house for our ongoing Hot Wing night.

We got the evening off to a great start with some wine in our matching wine glasses.

I brought over a salad and tossed it with one of my favorite dressings: El Torito’s Cilantro Pepita Caesar.

The evening got even better when it was time to dig into the hot wings.

No record setting night….I *only* ate 13. :) I had to save room for a S’mores Brownie!

I was excited about this morning’s breakfast. Yesterday I saw these bagels at the store and had to buy them.

They were big and doughy….just the way I like them. I don’t like all the calories though so I just toasted half of one and added some peanut butter.

It was plenty. Although I’m sure I could have eaten the other half if I had too. :)

I took the kids to school and stopped at Starbucks for a skinny vanilla latte.

Then I went over to Great News for a cooking class. Today’s class was entitled “Pacific Rim Cuisine” with Chef Phillis Carey.

The recipes were set up like a meal. Our “appetizer plate” contained two recipes: Ginger Chicken Pot Stickers with Spicy Mango Sauce and Asian Slaw with Shredded Vegetables and Greens with Sesame Soy Dressing.

I could have eaten a giant vat of this. The pot stickers were perfect and I loved the slaw. The dressing on it was fabulous! I’ve never made pot stickers before and it didn’t look that hard. I would make these for sure. 

Our “dinner plate” also had two recipes: Spice Rubbed Salmon with Blackberry Ginger Port Sauce and Wasabi Spinach Mashed Potatoes.

I loved the colors of this meal! The salmon was good but I really like the wasabi spinach potatoes. You grind up baby spinach in the food processor and add them to the mashed potatoes. It makes such a great color!

Dessert was Butterscotch Ginger Macadamia Tart with Ice Cream and Chocolate Sauce.

The tart was delicious.  You could use any nut you like. You have to really like nuts though because it’s full of them! The homemade chocolate sauce stole the show though. I see no reason to buy chocolate sauce anymore. It’s so easy to make! 

After class, I ran some errands, picked up the kiddos and came home. I have some chicken marinating for dinner tonight. I hope the recipe turns out so I can share it with you!

When roasting marshmallows for S’mores, do you like them barely browned or plain old burnt? I like them right in the middle!
