137.6…Spring Tea Party

Last night’s dinner was anything but ordinary leftovers.

I froze the rest of my Chili-Cheese Mac into individual portions so it would be easy to defrost and reheat. True, it wasn’t as good as it was when it was first made but it still tasted delicious to me. In order to get some veggies in, I made a salad to go with it.

Breakfast this morning was my new favorite combination: Pineapple Chobani yogurt with my homemade granola and berries.

This morning I had a cooking class at Great News.  Today’s topic was “Spring Tea Party” and was taught by my favorite instructor, Phillis Carey. I love all things tea sandwiches. I’m obnoxious when I go to any tea-type party. I basically hover around those little sandwiches and eat them until they are gone. There’s just something about little bite size foods.

The first two recipes were Crab Salad Toast Cups and Ciabatta Crostini with Asparagus Tips, Prosciutto and Mozzarella with Tarragon Butter.

Those little Crab Salad Toast Cups are a perfect example of something I would hover over. They were fabulous. The cups were made out of buttered bread that was formed in mini muffin tins and baked. Genius. The crostini was also delicious….I love anything with prosciutto.

The next two recipes were BLT Turkey Club Tea Sandwiches and French Brie, Ham and Apple Baguette Fingers.

Both slices of the bread for the BLT were slathered in mayonnaise that was mixed with crumbled bacon. Um…how could that be bad!?! Loved the baguette as well. Great flavor combination!

The last plate was two desserts: Orange Yogurt Panna Cotta Cups Topped with Grand Marnier Strawberries and Lemon Cream Cheese Scones with Homemade Lemon Curd.

Both were excellent. Loved the smoothness and orange flavor of the panna cotta. And you can’t go wrong with lemon curd.

Now I just need to host a tea party so I can make all these and hover over them.

After class I went to Target and came home. Tonight we are going with some friends to the Hamburger Factory for dinner. We usually have hot wings there but after Sunday night’s hot wing eating record, I may have to sit these hot wings out.

Are you crazy for “little food” like I am?

  1. I love bite size little food too. Those little treats are dangerous for me because in my head little food means eat 3x as much! That Ciabatta Crostini looks delicious.
