137.4…Nutella Granola

As promised, I bring you another amazing granola recipe. This one may be a bit more sinful than the last one, but everything in moderation right?

Nutella Granola

5 Tbsp Nutella

1/4 cup honey

2 cups old fashioned oats

1/2 cup chopped almonds

Preheat oven to 325 degrees. Spray a cooking sheet with cooking spray and set aside.

Combine Nutella and honey in a microwave-safe bowl and microwave until just melted, about 25 seconds. Stir Nutella and honey together until combined completely.

Pour oats into Nutella and honey mixture and stir until oats are completely coated in Nutella mixture. Once all the ingredients are mixed, the granola will be thick and almost moldable. Spread onto the cookie sheet, making sure to separate the oats a bit to create clusters. Bake for about 45 minutes, flipping a few times during the baking.

Remove granola from oven and allow to cool and harden into crunchy clusters.

Last night’s dinner was a bit of an experiment. We had leftover wings (shocker!!) from Sunday night’s dinner. Instead of throwing them away, Alicia and I split them and I popped them into the oven to warm up.

I ate some of the leftover Black Bean, Chickpea and Corn Salad with the wings. While the wings were not as crispy reheated, they still tasted good to me! Glad we didn’t throw them away!

Breakfast this morning was a toasted waffle with homemade peanut butter and an apple.

I took the kids to school and went to spin class. After class, I made a quick trip to the grocery store and then came home to shower.

Lunch was a roast beef sandwich with cucumber slices and lettuce. I spread a bit of leftover Herb Dip on both slices of bread. Genius! That stuff rocks on sandwiches! I also had some more Black Bean, Chickpea and Corn Salad. This stuff is great leftover!

  1. I love granola too and this is my current favorite recipe:

    3 cups rolled oats
    1 cup slivered almonds
    1 cup shredded sweet coconut
    1/4 cup plus 2 tablespoons (or 6 tbsp) dark brown sugar
    1/4 cup plus 2 tablespoons maple syrup
    1/4 cup vegetable oil (I used coconut oil)
    3/4 teaspoon salt

    Preheat oven to 250 degrees F.
    In a large bowl, combine the oats, nuts, coconut, and brown sugar.
    In a separate bowl, combine maple syrup, oil, and salt. Combine both mixtures using hands and pour onto 1 sheet pan. Cook
    for 1 hour and 15 minutes, stirring every 15 minutes to achieve an even color.
    Remove from oven and transfer into a large bowl.
