137.0…Blueberry Muffins

Recently we had out of town guests and I thought blueberry muffins would be a nice treat to wake up to.

These muffins are teeming with blueberries and have a delicious crumb topping.  They are everything a blueberry muffin should be.

Blueberry Muffins (Makes 8 Muffins)
Recipe: AllRecipes.com
  • 1 1/2 cups all-purpose flour
  • 3/4 cup white sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/3 cup vegetable oil
  • 1 egg
  • 1/3 cup milk
  • 1 cup fresh blueberries
  • 1/2 cup white sugar
  • 1/3 cup all-purpose flour
  • 1/4 cup butter, cubed
  • 1 1/2 teaspoons ground cinnamon
Directions
  1. Preheat oven to 400 degrees. Grease muffin cups or line with muffin liners.
  2. Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.
  3. To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.
  4. Bake for 20 to 25 minutes in the preheated oven, or until done.

Thursday night we didn’t end up meeting with our friends so we went to our community’s club instead for dinner. They had a soup and salad bar plus a regular menu. Soup and salad just sounded perfect to me!

I really wasn’t a big fan of the soup….it was a roasted red pepper soup so I ate a ton of salad. After eating the above plate, I went back two more times. I really got in all my servings of vegetables that day!
Friday morning’s breakfast was a toasted English muffin with homemade peanut butter and a bowl of berries.

I met some friends at the gym for a one hour elliptical session and then went to get my nails done. I picked up lunch at Luna Grill and brought it home to eat.

Greek salad with a grilled chicken kabob, pita and tzatiki sauce. Fabulous!!!

I got dressed and we all went to a friend’s house for Passover dinner. She did such an amazing job with everything….the food, the table set up and the religious service. We started with matzo ball soup. I really enjoyed it. The broth and matzo balls were perfect. Then came a salad with a special family recipe dressing. Also delicious! The main course was two kinds of chicken (chicken with orange sauce and stuffed chicken), roasted potatoes and carrots with prunes. Dessert was an assortment of macaroons, chocolate covered mints, chocolate covered raisins and a gorgeous fruit platter. I wanted seconds of everything but was too stuffed at that point. :) You could tell how much effort she went to preparing it all. It was an honor to be invited on such a special evening. The kids had a great time playing with their friends and I enjoyed everyone’s company.

This morning’s breakfast was pineapple Chobani yogurt, homemade granola and berries.

I went to my son’s tennis lesson and then spin class. I always wear my heart rate monitor to class. I think our previous record in spin class was somewhere between 500-550 calories. My instructor informed me that if I could get to 600 calories, he would bring in mimosas for the class. Well, when I get challenged, I don’t give up. I almost killed myself but I ended up at 626 calories at the end of the class. What I wouldn’t do for a mimosa??

After that crazy workout, I came home and ate an apple and homemade peanut butter.

After I showered and got dressed, we all went to PF Changs for lunch. I ordered one of their lunch specials. It came with soup so I chose the Egg Drop Soup.

My entree was the salmon with asparagus and brown rice.

I put their spicy sauce that they mix at the table all over it and was great! After lunch we went to the beach for a couple of hours. It  is  such a beautiful day in San Diego. I do have to admit that I despise the beach. I don’t like the ocean or the sand….especially the sand. It gets everywhere.

After I cleaned up all the sand that was all over me, the kids, the car, the towels and everywhere else, I felt I deserved a glass of vino.

  2. I have to say if there was a beach close, I'd love it. The only beaches we have are at lakes...but love those too!
