145.8…A Fried Fourth

How was your Fourth of July? Mine was fantastic and very relaxing!

Before going over to our friend’s house for the festivities, I snacked on some Wheat Thins and a Trader Joe’s low fat cheddar cheese stick.

I made my favorite guacamole (Barefoot Contessa’s recipe) to bring over with some chips and salsa.

I ate a ton of the guacamole. I could live on that stuff. I also drank my fair share of wine. Ah….I love holidays!

My friend made my favorite fried chicken recipe. Another Barefoot Contessa winner!

I really do love fried chicken. I rarely eat so when I do, I want it to be the good stuff. This was!

She also made potato salad and a green bean salad. I was in heaven.

Yes, I went back for seconds. Wouldn’t you?

The only thing that was missing on my 4th of July was the fireworks. By the time we ate and the kids swam, we were all tired and came home. I could hear the fireworks from my house….does that count? Oh, well….maybe next year.

So today I’m back on track with my diet. Healthy food all around! :)

Breakfast was Trader Joe’s Strawberry Yogurt O’s cereal with almond milk, raspberries and strawberries.

Today was the kid’s first day at summer camp. It was even more exciting because they get to take the bus this year. Last year my daughter wasn’t old enough but she is this year. Yeah! I don’t have to drive as far and the kids love it!

After the bus drop off, I went to my Cardio Muscle class. I’m super sore from yesterday’s class so it should be interesting to see how I feel tomorrow!

Lunch time rolled around and I made tuna salad with celery, pickles and a bit of mayo. I used celery sticks and red bell pepper strips to scoop it up.

The rest of the day was spent paying bills and putting laundry away. Eventually it was time to pick up the kids. I grabbed an orange to eat on the way.

I feel great after having such a great day of healthy eats….but after looking at that picture of the fried chicken….I wouldn’t mind another piece! :)

  4. I had a baby last year and put on a bunch of weight that seems to be sticking around. So, I just started a new eating plan.

    I am doing meal replacement, and 1 fabulous meal a day that I post on my blog. I turn 40 in 3 months and hope to take off the weight by then.
