143.2…Getting Better on the Grill

I feel fairly confident as a baker and cook. The one area of cooking that I feel less confident is the grill. I’ve been getting a bit of practice at it this summer and last night was no exception.

I had a helper while I made dinner last night:

You always grill better with wine!

I found a recipe for Cilantro-Lime Chicken with Avocado Salsa from the April 2009 issue of Cooking Light. It looked perfect for summer. I began by making the Avocado Salsa. I added corn to mine because I had one ear that needed to be used up. I thought it was a great addition!

I marinated the chicken and got the indoor grill pan preheated. Then it was time to grill!

To go with it, I made Saffron Rice. I changed the recipe a bit…used chicken broth instead of water, omitted the butter and used a bit of olive oil instead, omitted the yellow food coloring (it was plenty yellow without it) and fresh parsley instead of dried.

What a colorful plate! Loved it!

I am on an egg sandwich kick so I made another one for breakfast. I used egg beaters and a slice of cheese on a toasted sandwich thin. I took a break from watermelon and had some cantaloupe.

I took the kids to the bus for camp and went to my Cardio Muscle class. The exercises we did were in a ladder type of rotation with the first exercise being 20 squats. There were 10 rotations so we did a total of 200 squats. I hope I can sit down tomorrow.

Afterwards I took my sweaty self to Trader Joe’s. When I got back, I cleaned up and made lunch. I was starving! I reheated the rest of the Saffron Rice and put the rest of the Avocado Salsa on top. Delish!

I finished organizing my bathroom and started packing for Hawaii. This weekend is going to be crazy so I thought I’d get a head start on it. I can’t believe we leave on Sunday. I see a lot of delicious fresh fish in my future.

Before I left to pick up the kids, I was pretty hungry so I made a snack.

Now I’m hungry again. Looks like it’s going to be an early dinner tonight.

  2. Those grill marks really are gorgeous. I've never taken anything that lovely off the grill. And what is up with only eating one Smores?! How is that possible? I'm in awe of your self control. Way to go, girl!

  3. I have never heard of the smores. I would LOVE those! That dinner looks and sounds absolutely amazing. I love saffron rice. And cilantro, lime, avocado? That is perfect sounding for summer!
