140.0…Lightened Bolognese

It’s no secret that I like food. All types….healthy, not so healthy…I embrace them all. When something tastes unhealthy but really isn’t, that’s the best of both worlds.

Those two worlds collided last night when I made the cover recipe from the most recent issue of Cuisine at Home magazine.

Lightened up Bolognese sauce? Sign me up!

It was filling, fabulous and easy to make. I made only a few changes to the recipe to add more flavor.

Lightened Bolognese (8 servings)

Printable Recipe

1 Tbsp olive oil

1 lb. ground turkey breast

8oz bulk Italian turkey sausage (I used Italian chicken sausage)

1/2 cup diced onion

1/2 cup diced carrot

1/2 cup diced celery

1 Tbsp minced garlic

1 cup 2% cottage cheese

1/4 cup tomato paste

1 can Italian style diced tomatoes in juice (28 oz) -

1 cup dry red wine

2 Tbsp balsamic vinegar

2 tsp each dried oregano and basil

1/2 tsp each kosher salt and red pepper flakes

1/2 cup low fat cream cheese

1 cup chopped fresh parsley

Heat oil in a large sauté pan over medium-high. Add turkey breast and sausage breaking into smaller chunks; cook until browned.

Process onion, carrot, celery and garlic in a food processor until minced; add to browned meat. Cook vegetables until softened, 5 minutes. Process cottage cheese in food processor until smooth, 2 minutes; stir into meat mixture in sauté pan.

Stir in tomato paste, cook 1 minute. Add tomatoes, wine, vinegar, oregano, basil, salt and pepper flakes. Reduce heat to medium-low; simmer sauce for 40-45 minutes, stirring occasionally. Add the cream cheese, stirring until melted, then stir in parsley.

Per serving: 255 cal, 10g total fat, 12g carb, 26g protein (6 PointsPlus)

 

Last night’s dinner wasn’t as exciting but enjoyable nonetheless. I had to take my son to an event at his school so I had pulled out another container of Ellie Krieger’s Four Cheese Mac & Cheese from the freezer to reheat with some broccoli slaw:

Looks weird but it tasted great! After getting the kids to bed, I had some tangerines for a snack:

This morning I had an apple with a sprinkle of cinnamon for breakfast:

I had a hair appointment in Orange County and was meeting my friend Dina there. We stopped for breakfast first. I had an egg white omelet loaded with veggies and sliced tomatoes and wheat toast on the side:

So freaking good. I ate every bite. (duh!)

After our hair appointment (I feel like a new person), we stopped for a quick lunch. Chinese chicken salad:

It was the most unique Chinese chicken salad I had ever eaten. It had broken up pieces of uncooked ramen noodles to give it a crunch, along with dried peas and several kinds of nuts. As weird as it sounds, it was actually quite good! Again, I ate it all. Is that ever surprising?

I made the treck back to San Diego, stopping along the way at Trader Joe’s to buy some more fruit.

7. I used to take flying lessons. I even fly by myself! I stopped flying because one day my engine died at 6500 feet. Fortunately, we were able to make a safe landing with no engine on a private airstrip that we found. I felt like it was time for me to put flying on hold.

6. I was born on my dad’s birthday: December 16th. It’s quite a celebration at our house. :)

5. I can list the states in alphabetical order.

4. I have never broken a bone in my life.

3.  I’m an organizational freak. My closet is organized by type of clothing, then by color. I write lists like there’s no tomorrow.

  3. Have you tried pink sauce? That's my fave. I love red sauce, and I love white sauce too, but I can't eat much of either of them. Red sauce with a touch of sour cream, or heavy cream, is the perfect balance between the two! :-)

  9. I made this bolognese sauce a few weeks ago and we loved it. I made the light alfredo sauce too - it is great. I still have the vodka sauce to try.
