Bunco was so fun last night! I'm still dreaming all of the delicious eats.......

But first....we need to rewind to yesterday's lunch. I made an egg white omelet with a side of guac, salsa and pico de gallo. Inside the omelet was broccoli, mushrooms, red onions and I sprinkled the top with cilantro:


On the way to picking up the kids at camp, I had a Fiber One bar:



It did not hold me over....I had this when I got home:



Peanut butter on toast. Ahh....much better!!

My friend, Cathi, was hosting Bunco last night. She was going to show us how to make her famous pizza. Her pizza tastes amazing....I was so excited to learn! She had me come over a little early to help out. Of course, I had some wine right away:

I helped slice and cook some potatoes for a white pizza with pesto:

I must have had six pieces of that delicious pizza. I had some pasta that Cathi made and some caprese salad. I did mange to have enough room to eat one of Lisa's brownies. :)

This morning I kept things healthy with Fage yogurt, Fiber One cereal, almond milk, strawberries & blackberries:

After I took the kids to camp, the eating continued....at cooking class. Great News' class was Italian Cuisine using California Ingredients today.
First up was Grilled Focaccia Bruschetta with Buffalo Mozzarella, Italian Sausage and Tomatoes:
















YUM!! It was basically a grilled pizza with a caprese type salad on top. Loved it!
Second recipe was Eggplant Rollatini with Ricotta and Basil Filling:

















This was delicious also! The recipe used eggplant rolled up instead of lasagna noodles!
Next was Saffron Risotto Primavera with Grilled Shrimp, Asparagus, Peppers and Peas:

















Fabulous! The risotto was perfectly creamy and I loved the taste of the grilled shrimp and asparagus in it.
The next one was Chicken Parmigiano with Prosciutto, Fresh Tomato and Basil Topping:















Another winner! I loved the fresh tomatoes on this!

Dessert was Chocolate Ricotta Cheesecake with Chocolate Crumb Crust:


















My mouth is watering just looking at this picture. It was so delicious! Must make this one soon!

After class, I went to get a bridal shower gift for a friend and then picked up the kids from camp. Lisa and I are going to go for a walk soon (desperately need to burn off all these calories I consumed yesterday and today!). Dinner will be light for sure. I think I've eaten enough today. :)
Do you/have you ever watched Soap Operas? I've been watching Days of Our Lives for 20 years. Should I be admitting this? :)

  1. I grew up watching All my children with my mom - love it! Now, I like nighttime soaps - 90210 and stuff like that! haha

    I'm so jealous of your yummy eats the past 24 hours. I've been eating my weight in birthday cake since Sunday. It must.stop!
