Sorry I have been MIA but the weekend was crazy and there was no time to blog! We had a ton of family in town and I cooked a ton, ate a ton and had a ball!! I do have say that I'm glad life is back to normal today. :)

Saturday morning's breakfast was peanut butter on Ezekiel toast with coffee:




















I finished getting all the food prepared and took my kids and my sister in law's kids (they were staying with us for the weekend) over to my other sister in law's house for brunch. My brother in law and two of his kids came in from Atlanta that morning. I had some eggs (one with cheese, one with mushrooms):



















I was saving room for all the yummy eats I made. We all arrived at my house and went outside for some fun in the pool. I put out some guacamole and chips (my favorite guacamole recipe is here), salsa (a Baja Fresh copycat recipe) and a fabulous Pico de Gallo:



















After a bit, it was time to fire up the barbeque! I bought some Pollo Asado from Costco and threw that on. On the right, is some fresh fish that hubby caught fishing! I marinaded it with the marinade in this recipe. Excellent marinade!

I had one chicken taco and one fish taco. I LOVED the fish tacos. What made it fabulous was the fish taco sauce I made. The sauce came from this recipe and was AMAZING! On the side was a Mexican Bean Salad (very good!) and some Potato Salad.

So GOOD!!!!!!!!!!! It was a big hit!! Everyone did a double take when they looked at it, trying to figure out if it was a sandwich or something else. :) It tasted like a peanut butter and jelly sandwich. Crazy!!

While I was cleaning up, everyone made S'mores at our fire pit:



















I was glad to get into bed that night!

Sunday morning, everyone hopped in the car and made our way over to The Broken Yolk for breakfast. My brother in law is a big fan of the show Man vs. Food and this restaurant was on there for their Crazy huge omelet. If one person can finish it in under an hour, you get your name on the wall. We didn't come to meet the challenge but to just order it and split it and have some giggles.

Check it out: A dozen egg omelet filled with mushrooms, onions, American cheese, smothered with chili (we had our on the side). On the other half of the 15 inch pizza pan is 1 1/2 lbs of potatoes and two biscuits:



















It took 4 adults and a little help from 5 kids to finish it:



















I cannot imagine in my right mind how anyone could eat that by themselves. There were a bunch of names on the wall though!!

After breakfast, it was off to Sea World!! We weren't hungry for a long time (surprise) but ate some of the peanut butter and jelly sandwiches that my mother in law packed along the way. :)

After a long day at Sea World, everyone (17 people!) came back to my house for dinner. I had a ton of leftovers from the night before so we just had more tacos! This time, I just had the fish tacos (3 of them) and nothing else. They were so good!!! I had the last of the peanut butter and jelly cake too. :)

Breakfast yesterday morning was quick: a bagel (half with peanut butter, half with just butter):



















Then we hit the road for Disneyland!!! My mother in law packed turkey sandwiches on wheat so we ate those along the way. These people don't like to stop. :) After a long day, we went to Graziano's for dinner in Yorba Linda. I needed wine:

We ordered a bunch of pizza and spaghetti...by the time it came, everyone attacked. :) No pictures. I had two slices of cheese pizza, some spaghetti with marinara and 2 buffalo wings. We hit the road and came home and fell into bed. Everyone was exhausted!!!

Now everything is back to normal....AHHHHHH......

Breakfast was Kashi Honey Sunshine & Fiber One cereals with almond milk, strawberries and blackberries:



















I took the kids to camp and then went to spin class and had a fabulous workout! Now its time to put laundry away, finish cleaning up and make lunch!! I have Bunco tonight so the shenanigans will continue......

  1. You never cease to amaze me. With all those people to feed and entertain, I would be in Betty Ford by now! I think I need a Kahlua just reading about it all!

    The peanut butter and jelly cake was adorable!!! What a cute cake to bring to a school function!
