Last night's dinner was a slow cooker creation: Hungry Girl's Outside-In Turkey Tamale Pie:




















I topped mine with shredded low fat cheddar, onions and tons of Cholula. It may look like a mess in a bowl, but it was delicious!!!

For dessert I had Special K granola with almond milk and blackberries:



















After getting the kids to bed, I went over to Lisa's to watch the Bachelorette. I avoided the brownies. It was hard but I managed. :) I brought over some hot tea to keep my mouth busy.

Breakfast this morning was Fage yogurt, Fiber One cereal and strawberries:


















I took the kids to camp and went to Great News for a cooking class. Today's class was entitled: Bite-Size Summer Appetizers. First up were two recipes: Grilled Pizzettes with Greek Tomato, Cucumber, Red Pepper and Feta Cheese Salad AND Zucchini Feta Cakes with Yogurt Mint Sauce:


Both were excellent! I loved the Greek Salsa on the pizzettes the best. It would be awesome with pita chips!

Next were two more: Dilly Cheddar Cheese Fondue Bites AND Salad Rolls in Rice Paper with Shrimp and Tofu with Peanut Sauce:

I couldn't make this picture attractive no matter what I did....doesn't matter....both things may look odd, but they tasted delicious! The peanut sauce was inside the rolls...that's what's giving it the dark color.

Next recipe was Prosciutto and Sun-Dried Tomato Deviled Eggs:

I love deviled eggs....these were a great version!

Last up was Seared Scallops with Thai Sweet Chili Sauce and Creme Fraiche en Croute:

I wasn't a fan of this one. Everyone around me seemed to love it but I wasn't feeling it. I'm not a big fan of scallops so maybe that was the problem?

I went to Trader Joe's and then to pick up the kids from camp. Came home, changed and went up the "fire hill" with Lisa and some other friends 3 times.

I whipped up a tasty number for dinner. I made a taco salad from this recipe. I used wheat tortillas:

I didn't use the ranch dressing. I topped mine with Cholula of course. So delicious!!!! The baked tortilla was awesome!

Ok....just about bedtime folks!!
If you had one last meal, what would it be? Dinner at Ruth's Chris steakhouse for sure!
