137.2…A Kid’s Meal

Foodbuzz recently sent me coupons to try Van de Kamp’s new ParchmentBake as part of their Tastemaker program. It’s a grilled fish (Classic Grilled, Roasted Garlic, Garlic Butter or Lemon Pepper)wrapped in parchment paper. You cook it in the parchment paper and it retains the fish’s natural moisture and flavor. Well, my store didn’t have it so I decided on Van de Kamp’s Crunch Fish Fillets. I haven’t had these things (or fish sticks) in years! I grew up on fish sticks. I decided to pair it with some macaroni and cheese and some steamed broccoli.

At first glance, this looks like a meal you would serve to a child. But this isn’t any kid’s meal. First of all the macaroni and cheese isn’t your standard mac & cheese. It’s Ellie Krieger’s recipe for Macaroni and 4 Cheeses. The recipe calls for frozen pureed winter squash. I had one container of it left in my freezer from the last time I made it. I love this recipe! It tastes just like good mac & cheese! You would never know there were veggies in there.

Frank’s Original Red Hot Sauce. I have never put Frank’s on mac and cheese before. I don’t know why not. It was fabulous.

Back to the fish fillets…I loved them. I cooked them in my toaster oven for the specified amount of time and they came out perfectly crispy and delicious. The only issue I had with them was that they are SO small! The serving size is two fillets but I didn’t want all the extra calories so I only made one. It would make a good fish sandwich with some tartar sauce. :)

After dinner, I happened to look out our back window and look what I saw:

I’m not sure what kind of bird that is (a hawk maybe?) but it was definitely a beautiful sight!

Pineapple flavor Chobani Greek Yogurt. I had heard the pineapple flavor was awesome but had never tried it. Well, my local Target has Chobani so I bought some. I added some berries to it for breakfast this morning.

One word: Fabulousness. I loved it! It was so creamy, with the right amount of sweetness from the pineapple. I might be a Chobani convert!

I took the kids to school and went to Zumba class. Afterwards I went to lunch at Subway. I thoroughly enjoyed my roasted chicken sandwich LOADED with buffalo hot sauce. I think the Subway people think I’m nuts.

I picked up the kids from school and came home. Tonight I’m going with a couple friends to a BBQ cooking class at Barbeques Galore. I’m really excited!!

  2. I love the Chobani yogurts too! But I don't care for any of the fruity yogurts (in any brand). I stick to honey and vanilla..I'll have to try pineapple! I love adding blueberries, strawberries or banana slices and some granola for breakfast.

  5. Chobani is my favorite as well. I am really digging their new mango and passion fruit flavors. I also prefer the texture over Fage.
