143.0…Eggnog Muffins

In honor of National Taco Day yesterday, I had some of my leftover carne asada tacos for dinner.

Well, I cheated a little.  I ate them without the corn tortillas. Let’s just call them deconstructed tacos shall we? I ate it with the rest of my Creamy Cole Slaw (shed a tear when it was gone) and some Mexican Bean Salad.

I whipped up my Sugar Cookie Bars for the lucky winner of Spiffy Cookie’s blog bake sale. These bars brought in $35 to a great cause!  They are all packed and off to the post office.

Breakfast this morning was two toasted slices of raisin bread with Teddie peanut butter and strawberries.

After I dropped off the kids at school, I went to Cardio Boot camp class and got my butt kicked.

I came home and started prepping for my Eggland’s Best brunch tomorrow. In honor of National Breast Cancer Awareness Month, Eggland’s Best has invited me to be a part of the “Eggland’s Best Double Dozen” that will help raise awareness and funding for the fight against breast cancer.

As a part of the “Eggland’s Best Double Dozen,” Eggland’s Best has offered me the opportunity to host a brunch for me and my friends; celebrating the women who inspire me to do good in the community. Eggland’s Best is also making a $100 donation in my name to Susan G. Komen for the Cure for my time and efforts in raising awareness for breast cancer research.

One of the recipes I will be serving tomorrow are Eggnog Muffins. When I chose this recipe awhile back, I didn’t realize that the stores would not carry eggnog this early. Oops! So, I made it myself! I used this recipe for it but made a lot less that the recipe calls for since I only needed a little.

Oh my gracious. Why would I ever buy eggnog when you can make it at home (it was easy!) and it tastes this good! Good thing I didn’t make the whole recipe. I would be in trouble. 

I whipped up the Eggnog Muffins and they came out great!!

Eggnog Muffins (Makes 12 muffins)

Original Recipe: Phillis Carey

Printable Recipe

2 cups flour

2/3 cup sugar

1 Tbsp baking powder

1/2 tsp salt

3/4 cup prepared eggnog

1/2 cup Myer’s Rum

5 Tbsp unsalted butter, melted

1 large egg, beaten

1/2 tsp freshly grated nutmeg

1. Preheat oven to 400 degrees. Spray a muffin pan with nonstick spray. In a large bowl, whisk together the flour, sugar, baking powder and salt. In another bowl whisk together the remaining ingredients. Make a well in the center of the dry ingredients and all all the wet ingredients. Still until just combined.

2. Scoop batter into prepared pan and bake for 20 minutes or until a toothpick inserted in the center comes out clean. Cool on a rack 10 minutes before removing from pan.

For my the eggnog I made, I omitted the rum because I added it in the muffin batter. I also made mini muffins (24) and regular size muffins (4) with the rest of the batter.

For lunch I had a bowl of roasted red pepper & tomato soup with a big salad. I added the Mexican Bean Salad and some carne asada to it. Great salad!

I spent the rest of the day prepping my recipes for tomorrow’s brunch. I will be using a ton of eggs….about 30 total!

From September 15th to November 15th, Eggland’s Best will be turning their distinctive red “EB” stamp into a pink “EB” alongside a Susan G. Komen for the Cure running ribbon logo. Eggland’s Best will also be pledging $50,000 to the Susan G. Komen Foundation, which will help expand the foundation’s mission to discover and deliver the cure for breast cancer across the globe.

Tonight we are going out to dinner with some friends and their kids. Have a great evening!

Do you purchase Eggland’s Best eggs?

Has breast cancer affected your life in some way? Both my grandmother and my mom survived breast cancer. I just had my first mammogram last year.
