143.2…Creamy Cole Slaw

I truly had a weekend of awesome eats! Last night was no exception. We had friends over for a barbeque and everything turned out great!
I served my favorite guacamole with tortilla chips as soon as my friends arrived.

I barbequed some pollo asado and carne asado to go with my recent taco theme on the blog. No recipes here….just bought it at Costco. :)

On the side, I made Mexican Bean Salad. This stuff rocks.

I also made my favorite Cole Slaw. It seriously is the best Cole Slaw ever!

Creamy Cole Slaw
Slightly adapted from Bobby Flay
  • 1 head green cabbage, finely shredded
  • 2 large carrots, finely shredded
  • 3/4 cup best-quality mayonnaise
  • 2 tablespoons sour cream
  • 2 tablespoons grated Spanish onion
  • 1 tablespoons sugar, or to taste
  • 2 tablespoons white vinegar
  • 1 tablespoon dry mustard
  • 2 teaspoons celery salt
  • Salt and freshly ground pepper

Directions

Combine the shredded cabbage and carrots in a large bowl. Whisk together the mayonnaise, sour cream, onion, sugar, vinegar, mustard, celery salt, salt, and pepper in a medium bowl, and then add to the cabbage mixture. Mix well to combine and taste for seasoning; add more salt, pepper, or sugar if desired.

The original recipe calls for more sugar but I don’t like my Cole slaw to be sweet so add more if you’d like. I also cheated and used a bag of Cole slaw mix from the store instead of chopping up the cabbage and carrots myself.

I loaded up my plate with a little bit of everything.

For dessert, I put out my Crack Brownies and Sugar Cookie Bars.

My friends brought over a chocolate cake, vanilla ice cream, chocolate chip cookies AND a Claim Jumper Chocolate Silk Pie!!!

We had so many desserts, I didn’t know what to do. Well, that’s kind of a lie. I did know what to do:

EAT THEM!  I had a little chocolate cake and ice cream and I tried the chocolate silk pie which was beyond delicious!

Clean up was a breeze and before I knew it I was in bed and fast asleep!

This morning my husband took the kids to school so I leisurely had breakfast.

Fage yogurt with Trader Joe’s High Fiber cereal, strawberries and raspberries. I went to my Cardio Muscle class and then went grocery shopping. I’m starting to get ready for a brunch I’m hosting on Thursday sponsored by Eggland’s Best to support Breast Cancer Awareness. In the mix: lettuce, tomatoes, cucumbers, chicken from last night and some Mexican Bean Salad from last night. I topped it all off with some El Torito Cilantro Pepita Caesar dressing (my current favorite dressing).
I picked up my daughter from school, took her to her “Dog Smart” class and then picked up my son. Somewhere along the way, I ate a Fiber One 90 calorie bar for a snack.

How do you like your Cole Slaw? As I mentioned, I don’t like it sweet. The only version I like that’s on the sweet side is KFC’s. :)

Have you done any “Fall” baking lately? I really want to make pumpkin bread but no one in my house likes it except me. The horror!

  1. All that food is making me hungry! I am not a huge coleslaw fan if it has too much mayo. Ick! But just the right amount and I will eat bowls of it.
