144.4 yesterday; 145.8 today…On the Rise

All this traveling is not very good for the waistline! Ouch! Oh well, you know me….what goes up must (or hopefully) come down!

Monday after we got back from Las Vegas, I stayed true to my word and went for my half marathon training for the day: a 4 mile run.

Mile 1 – 10:15

Mile 2 – 9:59

Mile 3 – 9:55

Mile 4 – 9:26

Hubby had to work late so I reheated some of the Black Bean Pizza and made a quick salad for dinner.

Yesterday morning I knew exactly what I wanted for breakfast: peanut butter. It went onto a toasted wheat English muffin with some cantaloupe.

I took the kids to school and went to Starbucks to grab an iced coffee and do some blog catching up.

Then it was off to cooking class at Great News! It’s had been awhile. I miss my classes! This class was entitled “Mediterranean Style Mezes and Tapas.

The first recipe was Phyllo Pizza with Three Cheeses, Tomatoes and Oregano:

I never thought to make a pizza on phyllo dough! Ingenious and delicious!

The next recipe was Grilled Prawns with Romesco Sauce (tomato, paprika, roasted pepper and nut puree) and Saffron Rice:

Loved this! The sauce was great! It would taste delicious on chicken as well. The rice was great….perfect side dish.

The third recipe was Falafels (Chick Pea Croquettes) with Pita Wedges, Lemon Yogurt Sauce and Red Pepper Feta Dip:

I love falafels!! I loved it best with the yogurt sauce but the red pepper feta dip would be awesome just as a dip served with pita chips. I’ll have to keep that in mind for the next time I need a dip!

The next recipe was Tuscan Eggplant and Pesto Crostini with Provolone and Parmesan Cheese:

Another excellent appetizer for a party! Loved the pesto and roasted eggplant together.

The last recipe was Street Size Tacos with Shredded Grilled Chicken, Black Beans, Cilantro Slaw and Cotija Cheese:

LOVED this! I will have to make this for the next barbecue I host. The black beans were so amazing and so was the slaw! Loved the whole thing!

After class I picked up the kids from school and came home to get ready for Bunco with the girls. My friend Julie was hosting at her house in La Jolla. We got really lucky with perfect weather and gorgeous sunset!

Besides THREE helpings of salad, I had some angel hair pasta with shrimp. I could have eaten more but I didn’t want to seem too greedy. :)

So I ate a brownie instead…..

This morning I rolled with a recent breakfast favorite:

I am really loving peanut butter on a warm, toasty English muffin.

I took the kids to school, helped celebrate a teacher’s birthday at my daughter’s school and went to a thank you breakfast for being a room mom at her school. I had an iced coffee. I was still full from my breakfast earlier.

Next it was off to Road Runner Sports to buy a new pair of running shoes. I bought my last pair in February but my Team in Training coach said now’s the time for a new pair. Alrighty then! When someone tells me to shop, I do it! :) I bought the same pair as last time (Brooks - just in a different color) because I love them.

I got to try a new place for lunch: Noodles & Company.

I was close by the one in Encinitas and Melissa from Noodles & Company had recently hooked me up with a free meal. Score!

They have noodles, soups, salads and sandwiches either with an Asian, Mediterranean or American flare. I choose to go with an Asian choice: Bangkok Curry Noodles with Shrimp:

You know I love me some curry! This dish was excellent! It was described as “Sweet coconut curry, broccoli, carrots, red pepper, onion, mushrooms, a light portion of ride noodles, served on cabbage with black sesame.” I loved all the veggies and how fresh it tasted.  Usually you get like 3 pieces of vegetables and that’s it. Not this dish…it was loaded with lots of the good stuff. I’ll have to bring my husband back there….I think it’s a winner! Thank you again Melissa!!

After lunch I had a dentist appointment (blech) and then picked up the kids from school. As if I haven’t been running around enough today, I have half marathon track practice tonight! I’ll tell you one thing….I’ll be glad when my head hits the pillow tonight.

  4. The food! The sunset! The noodles! Wow. I missed a few of your posts and the sugar cookie bars was one of them, but I did see you in Steph's lineup and I drooled a little. I do love sugar cookies, but I really love ALL cookies. I won 2nd place for mine at the fair last year! Maybe I should post that recipe some day.
