143.8…Baked Parmesan Spaghetti

Last night’s dinner was excellent. Baked Parmesan Spaghetti. How could this be bad? Comforting, hearty and soul warming.

The only change I made was to add chopped mushrooms and green bell peppers in with the onions for an added veggie boost! With a big salad, the meal was complete. 

After the kids went to bed, hubby and I took a dip in the jacuzzi. Usually that leads to a great sleep but I didn’t sleep well at all last night. Maybe it was the 3PM iced coffee that I made at home (and forgot to photograph) yesterday. Not doing that again.

Breakfast this morning was Fage yogurt mixed with some Trader Joe’s Blueberry Muesli and strawberries. I forgot I had that muesli. It was quite tasty!

I took the kids to school and then went to a very sweaty spin class. It feels good to get my workouts going again!

I came home to change and then it was errand time. Bank, dry cleaner and Subway for lunch. I rolled with something new today: the harvest chicken salad sandwich.

Verdict: I thought it was ok. It’s on the “lighter” menu so I thought I’d give it a try. Since it isn’t loaded with mayo, it didn’t hold together as well as I’d like. It was kind of messy to eat. I may get it again but I didn’t think it was anything special.  It was nice for a change of pace.

Next up was a trip to Target. Man I love that place. After I got home and unloaded everything, I grabbed some almonds and went to a meeting at my son’s school.

I picked up the kiddos and came home.

Right now I’m baking something special for Steph’s upcoming blog bake sale to benefit the Leukemia and Lymphoma Society. We are both running the San Diego Rock N Roll Marathon….although I’m running the half while she is running the full. More details to come….

  1. Good call on the veg boost! I do the same thing! <3 I conned my husband into making me baked spaghetti tonight! <3 hooray no cooking for this girl! =) phew! for once!

    I love museli cereal! and my old roomie worked at subway and she smelled like one all the time... I can't go into the store without dying =( but I can send ppl in for me! haha!

  3. I get the same 2 things from Subway every time: turkey breast or roasted chicken. I haven't changed in over 10 years--so predictable!
    That baked parmesan spaghetti looks amazing!

  5. I was so excited to see the chicken salad back...I actually really like it! I love it most in flatbread...somehow that bread fits better with the chicken salad than any other bread. :)

  9. This probably sounds super weird, but the smell of Subway totally deters me from eating there. I don't know what it does to my smelling sense, but it is gag-worthy. If I absolutely must eat at Subway, then I usually get a grilled Subway club. I can only eat their bread if it is grilled.

  10. I haven't had Subway in ages - I much prefer Jimmy John's - do you have that where you live?

    Ah, usually a dip in the jacuzzi makes me sleep like a baby too - but I am weird. I can drink coffee all day, even right before bed, and I am usually asleep within five minutes. I am 43 years old and can still sleep like a teenager!
