Whoa is me. I shall blame the fried chicken. (I bet the ranch dressing contributed to my demise as well.) Feeling a little better today otherwise!
Breakfast was Fage yogurt with a tablespoon of sugar free strawberry preservers, a half cup of fiber one cereal and some strawberries and blackberries. I needed a healthy, filling breakfast because I had a special cooking class today: Cookies. All Cookies!
After taking the kids to school, I made my way over to Great News Cooking School for class. Like I said, today's class was all about cookies.
The first two cookies you see here are:
1. Fudgy Chocolate Crackles with Chocolate Chips - these were simply amazing. Like little lava cakes/underbaked brownies in tiny cookie form.
2. Raspberry and Apricot Almond Shortbread Triangles - also excellent.....loved the preserves and the crunchy cookies.
3. Traditional Sugar Cookies with Colorful Buttercream Frosting - perfect little sugar cookie goodness!!
4. Phillis' (the best cooking instructor ever!) Heavenly Holiday Sever Layer Bars - these were little squares of heaven.....super sweet and rich...I don't think I even could eat too many!!
5. Red Velvet Cookies with Cream Cheese Frosting - if you like red velvet....these are awesome!
6. Chocolate Covered Cherry Cookies - these had a fun surprise of maraschino cherries inside....really good!!! Chewy, soft and perfectly sweet!
When I got home, I felt like I needed a snack after all those cookies. First of all....I did NOT eat all those cookies. I brought most of them home. My mom is visiting tomorrow and she will be the proud recipient of most of them! Anyhoo.....my snack was a wheat tortilla with shredded chicken, hummus, tomato and spinach.
I prepared the Tamale Pie that I'm making for dinner for my mom tomorrow night and put it in the fridge. I decided that I had enough time for a workout before dinner so I attempted something crazy.
They had a pre fix menu for $40 that including tons of stuff and a glass of wine. I had two glasses of Cabernet (hubby gave me his - what a guy!). I started with their chop salad (with no hearts of palm - what the heck are those anyway?):

There's a REALLY steep emergency access road where I live that I like to walk sometimes. I know there are some people reading this that have walked up it with me and cursed me the entire time. You know the road......well.....I ran up the entire thing!!! My heart rate monitor said 192 at the highest and my lunges burned liked nobody's business. I was determined to do it and I did. At one point I was afraid that I was going to have a heart attack and no one would find me but the coyotes. But I made it and I'm proud of myself. This was four hours ago and I can still feel it in my lungs.
